Re: Preparing for a Mexico Vaction - Help!! | | well, these places almost always have eggs & bacon or something along those lines for breakfast so you should be good there. Lunch--stick to salads, your chicken one, a caesar salad, etc. Snacks are probably the toughest. Pork rinds, cheese, take some mustard and sneak some hard boiled eggs from the breakfast buffet to make deviled eggs (you will have your mayo), dinners should be doable.
For me the alcohol would be the toughie. Poolside drinks would be hard to substitute.
Have a wonderful trip and hopefully a "legal" one too.
