Sounds yummy! I bet they would make a really nice dessert for a buffet or something to take along to a party!

What I've always wanted to try, but have never gotten the chance is a coeur a la creme. Coeur a la Creme It can be easily low carbed. I always tell myself I'll try to make it, but I keep putting it off......

I am really ready for Easter. Since Im the household cook and baker, I know I have total control over what I make.

I'll make traditional foods for my family - pasta al forno, chicken parmesan, mashed potatoes and gravy, and tiramisu and chocolate layer cake for dessert. For me, it'll be veggies with a parmesan crusted chicken breast and I made an Induction friendly cheesecake today which came out pretty good and has only 4 carbs per serving. Lucky me, nobody else liked it

I'm the cook so it will be easy for me. Ham, fresh green beans w/bacon, Mockafoni & cheese (delicious Atkins friendly recipe from Linda's site), deviled eggs, and salad. We are all diabetic so I don't have to worry about a desert...I will probably make sugar free jello for mom & the hubs but I'm not a jello person so I might have a flax cookie if I have anything. I don't have any problem with holidays, it's so easy to eat through them because of the things we can eat!

Mockafoni and Cheese (4 servings)

16 ounce bag frozen cauliflower (I use fresh)
4 ounces cream cheese
2 tablespoons heavy cream
4 ounces cheddar cheese, shredded
2 green onions, finely chopped
1 teaspoon minced chives, optional
1/2 teaspoon salt, or to taste
1/2 teaspoon pepper, or to taste
2 ounces cheddar cheese, shredded

Cook the cauliflower until tender; drain well. In a 1 1/2 quart casserole; soften the cream cheese in the microwave about 30-40 seconds on HIGH. Whisk in the cream until smooth, then stir in 4 ounces cheddar cheese. Microwave on MEDIUM about 2-3 minutes or until the cheese is melted. Stir well until creamy and smooth, microwaving a little longer if necessary. Stir in the green onions, chives, salt and pepper. Add the cauliflower and gently fold into the cheese sauce to coat well. Adjust the seasonings if needed. Top with the remaining 2 ounces cheese and bake at 350º for 35 minutes, until bubbly and brown on top.
Makes 4 servings - bake in individual containers so you only eat 1 portion
Can be frozen

Per 1/4 Recipe: 326 Calories; 27g Fat; 15g Protein; 8g Carbohydrate; 3g Dietary Fiber; 5g Net Carbs

Wow Sunny, if I had your creativity I would never feel deprived!! I always cook and bake for my family and have a very hard time finding something to bake that is Atkins friendly. I think I may have to do some searching online for a good recipe. I am adding deviled eggs to my menu, and green beans with bacon and feta. I actually can't wait!

Sunny, If I left now I could be there for dinner today! I think I'll be doing that cauliflower and cheese dish you mentioned. I was dreading Easter without mac & cheese. That is probably the thing I'm missing most. I was an artist with mac & cheese, experimenting with different cheeses to match the main course etc... I could probably do the same thing with this.

Devilled eggs are always a hit. No one really makes them anymore, so when you bring them to a party or have them as an appetizer, they're gone in minutes.

The strawberry blossoms recipe is from my old low fat days. It used to call for low fat cream cheese and non-fat sour cream. It tastes soooo much better with full fat.

Wonderful suggestions above for Easter dinner. I will be baking stuffed turkey and glazed ham, asparagus and mashed potatoes. So the traditional type meal, but I will eat only the parts that are my diet friendly. We get amazing low carb cheese cake from the Low Carb store near by and no one in my family notices that it has been modified at all. Although I love to cook I tend to garden outside instead at Easter, having missed the wonderful sunshine we now have, all winter. So my meals are fast and easy except for the turkey.

My SO bought some spicy black chocolate, hot spice mixed with pure dark chocolate hand made. It is very hot and the most awesome chocolate I have ever tasted, way better that Lyndt and all those "professionally" made stuff. But because it is very spicy one can eat the tiniest amount only. And the taste lasts and lasts. I do agree that between chocolate and sex .... well, ok, sometimes.
