Default Are you ready for Easter dinner???

So I am the cook in my family for all holidays - my mom just has no desire anymore. My family knows I LC, but they want all the traditional Easter fixins like ham, lasagna, mac and cheese, biscuits, etc. I will be making all of this for them, but for me, I will have the ham and side Atkins friendly veggies. Wish me luck - although I feel I am determined enough to not need it!

I'm the family baker. So I'll be a-baking bread, etc. But I can't eat the stuff, eventhough I'm at the point in my Diet where I can.

I'll stick to the ham (smoked pork shoulder in our case), the leg of lamb, the asparagus with real Hollandaise sauce, the chopped salad, and the onion casserole.

I am just cooking Easter dinner for me, so I am having baked ham, asparagus with Hollandaise sauce, deviled eggs, and strawberry blossoms for dessert, if I have any. No way to feel deprived. There's just so much legal food to make to ever feel deprived.

I love to cook and bake. I am providing "treats" for my Sunday School class (about 40 people) on Sunday morning. I am baking my homemade yeast rolls I have been baking since I was 16 for ham biscuits. That will be hard, because I love bread, but I am so allergic to wheat. In addition, I am baking carrot cake cupcakes, from scratch, no mixes for me. I am baking decorated (Royal icing) sugar cookies. I'm making strawberry blossoms, which I can eat.

As a matter of a fact, I need to get busy!

I make lasagna with thin-sliced zucchini for noodles, and my family loves it. The almost like twice baked potato (cauliflower, green onion, bacon, cream cheese and sharp cheddar) will take the place of mac and cheese just fine for you. When I made this for me when my skinny little sister was here when I made her baked mac & cheese, she ate more of mine than I did. Asked for the recipe and she hates to cook.

I'm not sure exactly what we're doing for Easter dinner. For us its a big family affair but I won't be cooking anything as far as I know. I'll have to watch out for the rice pilaf that might be there (my favorite pre-Atkins) but I think for the most part it won't be too hard. I'll probably be too busy trying out the various roasted veggies and roast leg of lamb (yum!) to worry too much about the foods I'll have to avoid.

Now that the results are showing, my PIL are on board with supporting my LC lifestyle! Hurray! So I am having smoked salmon followed by roast turkey with veg. I won't miss a thing. The kids will be hunting eggs. I can have some 85% chocolate if I fancy it but all other chocci will be off limits x

I'm getting ready. I am making a ham, my MIL is making meatballs (crumbs in there, so none for me), cauliflower with cheese sauce, some other veggie TBA, devilled eggs, cheesecake for desser (made with splenda, so I can enjoy a small piece). I will not feel deprived at all! I like to be the cook so I can control what there is to eat

Strawberry Blossoms

8 to 12 large strawberries
3 ounces cream cheese, softened
