| i suck at making omlettes just because i can't seem to keep them in one piece, so it ends up being scrambled eggs. But one of my favorites is jalapeno, green pepper and black olive. also good is broccoli and cheese.

| I put olive oil in my no stick pan then i add the blended eggs and then i stick a piece of cheese on top and cover it and put it on med low. Voila in 5 minutes you have the perfect omelet that slides out of the pan. And yesterday i made an awesome mixture you might like it. First i sliced eggplant thinly and fried it in olive oil until blackened on both sides. Then i put then in the blender with one green chili pepper, a little bit of fresh coriander, and a quarter of a small tomato, and a small clove of garlic. Blend it all with a bit of salt. Then I threw that on top of my omelet and let it cook for a bit. Deliciously different!

| Bacon, cheese, avocado! My fave! I haven't had one in so long.... I make them with 3 eggs and a tiny bit of milk or cream, put in medium hot pan that has been well buttered and pour in. As the edges start to set, I pull them a way from the edge of the pan and allow the liquidy eggs to go there...keep going until its all gone. Then I add my fillings in the center and pull up the omelet on each side to cover...turn heat onto medium and cover for about 1-2 minutes. It slides right out of the pan onto my plate.

| Oh thanks guys. I love the suggestions. I adore chillis so will definitely be trying the recipes!! Bacon, avocado and cheese sounds amazing too. I made one tonight (run out of other food LOL) and had cheese, chilli flakes and half a tomato. It was nice. Zx |

| Im pretty boring, mushrooms, onion and cheese. I cook mine in the pan then sprinkle with cheese and put it under the grill. It saves trying to flip it. x |

| Recently I have been making my omelettes fluffy by first whisking the whites then folding in the yolks before pouring it into the buttered frying pan. I usually add grated parmesan and cooked bacon bits on top then either fold in half and flip over or put it under the grill to finish off. Sometimes I go mad and fry up some sliced onions beforehand in butter and add them to the egg mixture before pouring it into the pan. It makes a really flavourful omelette without any more fillings but a spectacular one with the cheese and bacon!
