| Not sure if you have the brand overseas but I use Hans bacon from the supermarket, it claims to be nitrate free here in Australia

| Folks, you're confusing nitrates with nitrites. Dr. A. said to avoid sodium nitrite as it's a known (or strongly suspected) carcinogen. Sodium nitrate is not. Hope that helps everyone's search. (I've found nitrate+nitrite-free bacon at virtually every supermarket I've looked at - Giant, Stop and Shop, Shaw's and Whole Foods). **************EDIT BELOW******************** Just checked the book and Dr. A does say nitrATES (p. 124) which I missed. Sorry about that. That being said, my research has shows that nitrITES are the carcinogenic concern, not nitrates, but YRMV (Your Research May Vary). Sorry for my misleading info above the asterisks.....Looks like I was the one confused...not the first time!

| Some recent research has questioned whether nitrite and nitrate do cause cancer. Now obviously nitrate and nitrite as such does not cause cancer (there is loads of nitrates in vegetables) but in meat they have been thought to form nitrosamines which has been linked to cancer. I guess we'll just have to hang in there and see what future research can reveal.
