Default Any lunch ideas! Really fed up of Iceberg Lettuce.

Hi there everyone i amon OWL Rung 2 at the moment,moving onto Rung 3 on Thursday.

Anyway,nearly every single day i eat Iceberg Lettuce with peppers,tomatoes,cucumber and some meat or fish.

Does anyone have any lunch ideas please,so fed up eating same salad everyday.

Any ideas much appreciated.

Do you have access to a microwave?

I like spaghetti squash with a meat of some type ( maybe leftover cajun chicken) and alfredo sauce.

Maybe greek salad- (no lettuce involved)

lasagna made with zucchini slices instead of noodles

egg salad with celery, green onions and tomato

homemade soup

egg frittatta with veggies ( can be eaten cold)

meat and cheese roll-ups ( in lettuce but still)

here are some ideas...

spinach salad with hard boiled egg, cheese, bacon, tomato

fajitas without the tortilla-- fried onions, peppers and chicken strips, with spices and topped with avocado, a dab of sour cream, shredded cheese and salsa

salad nicoise without the potato

chicken vegetable soup made with all legal veggies

cream of broccoli or cauliflower soup made with the veggies, chopped onion, chicken broth, cream and cheese

chicken strips (precooked) topped with tomato puree, a good dose of garlic and oregano and cheese (Pizza chicken)

on rung three, satay with peanut sauce and stir fried greens or a side salad with a ginger sesame oil dressing

When you move to rung 3 you can also slowly incorporate some baked nut products if you like those. I make muffins with flax and almond meal. It makes for a nice change.

I often bring leftovers from dinner to work the next day for lunch - its easy and provides lots of variety (not the same lunch every day - and dinner is different every night too). I've been using some of Linda's recipes - last week's lunches for me were: bell peppers and melted cheese over leftover beef roast, Rouladen (Linda's), deli meat wrapped around celery & cream cheese, leftover Cheesy Tuna Casserole (Linda's), leftover Mexican Spinach & Hamburger Casserole (Linda's).

I also like tuna or egg salad over greens & spinach salad similar to chinadoll's.

I vary my lettuces as well - romaine, spring mix, iceberg, spinach (ok, not lettuce), etc.

Thanks for that guys,will definately give some of them a go...was getting so bored.See i think thats the secret to sticking to this plan, do not let yourself get bored.
