For instance, I was in the upper dark brown level for a week or so, then I went lower to the next red and the yesterday, I must have eaten a hidden carb, I was in a lighter pink. This morning I am back on the highest level. Does it matter when it goes light pink, as long as I stay in ketosis. |
No. The ketostix only measure a concentration, not the actual number of ketone bodies. Their color is affected by things like exercise, moment of the day, food you had at your previous meal, water intake. As long as the color changes, you're in ketosis and that's all that matters.
However, just because the stix change color it does not necessarily mean you are losing weight. Nor does it mean you are out of lipolysis/ketosis if they don't change color.
Also remember that they'll stop changing color once you get to around 50 carbs per day.

Then, question two, will I need to be in a state of ketosis forever?

No. By the time you reach Pre-Maintenance you will probably be out of ketosis.
