Default Question about frozen cream cheese?

Ive been reading some of the dessert recipes on the board and has made me really want to try to make something. but i just want to make something simple. I was thinking of mixing some cocoa powder with a tiny bit of splenda into some cream cheese and then freezing it like a mousse/ice cream treat. But does anyone know how well cream cheese freezes? if i leave it in there overnight or too long will it become rock hard? thanks

also does it matter which cocoa powder i use? or should i be checking the ingredients list for that aswel? thanks

That sounds YUMMY. Freezing cream cheese overnight will definitely make it rock hard. Depending on the size of the batch, I would think an hour or two would do it. I think as long as the cocoa is sugar free, you're ok.

thanks ive been looking and so far the only cocoa ive found that has no sugar contains

Cocoa Powder, Acidity Regulator (Sodium Hydroxide, Potassium Carbonate)

would this be ok?

If you can afford it, consider investing in an ice cream maker. Ice cream needs to be whipped with air as it freezes, otherwise it ends up hard as a rock. If you have your own ice cream maker you can make your own low-carb ice cream in any flavor you want. I like to an ice cream with thick coconut milk and stevia and some unsweetened coconut flakes. That's all I add, and it comes out delicious.

edit: Maybe you could put your mixture into a pop-sickle mold with sticks? that might work out well if you don't have an ice cream maker.

Just incase anyone reads this, i have to say i tried to make this last night and it was delicous!! the best thing ive made on atkins lol. its my first dessert thing ive made for atkins

i mixed the cream, cocoa and splenda together and lined a container and spread it thinly into this and placed in the freezer. after an hour it was alittle solid already so i could cut it up into squares i love this!!

You probrably will have to wait until the dairy rung for this - I believe there is a limit on cream for induction.
