| Have you tried sauteed mushrooms? Nothing like salad We also really like red/orange/yellow/green bell peppers. How about hot peppers? Sour dill pickles?

| I don't know if i'd want to eat 2 cups of mushrooms a day lol I DO like mushrooms peppers and pickles, but i've discovered I can't really handle the yeast factor of mushrooms and the vinegar in pickles, and bell peppers are rediculously expensive if you're going to be going through that many a week. I do have a jar of roasted red bell peppers, but it isn't going to last very long

| Hi Kibskix, Have you tried brussel sprouts? I get frozen ones, heat them in the microwave with butter over the top and a pinch of salt! They are alot darker green than the lettuce, in the same family, tastes stronger though. We did a stewmeat, shrimp, onion, bell pepper, pineapple (which I didn't eat) shishkabobs last weekend on the grill. Marinated them in Kikkoman soy sauce (0 carbs) and worcestershire (1 carb)! Did my brussel sprouts instead of rice. Man if I could eat like that every day I would! |

| brussel sprouts are my favorite veggie, but its on the one cup a day list, not the salad veggie list.

| I have been living off sauteed onions and mushrooms in butter with my steaks. Also living off zucchini and squash fried in butter. MMMM I have an occasional salad. Usually ceaser with some chicken breasts. I also enjoy a plate with cucumbers/lemon pepper, radishes and cauliflower with ranch.

| spinach is on the list of "other veggies", not salad veggies. (limited to 1 cup/day)

| I make a lot of salads lettuce free. Just chop up onion tomatoes, cucumber, celery whatever and toss with some dressing. I also love coleslaw with mayo and spices in the summer. Its a great change from regular salads. creamed spinach (creamed with a couple tbsp of cream and some chopped sauteed onion). Mmmmm. |
