Default I'm eating a chia pet????

ok - for those of you who don't know what CHIA seeds are, if you google them, You'll come up with a wealth of information. They're higher in fiber than flax and healthier...

so anyways - we were supposed to have a team building today at work (got moved to another day yesterday afternoon). I had already planned on making them a low-carb cheesecake and a low-carb crumb cake.

The low-carb crumb cake is off of linda's website and was a HIT!!! everyone loved it. Linda's Low Carb Menus & Recipes

Everyone liked the cheesecake -

but then I told them I made it with chia seeds and of COURSE their first question... "am I going to grow a chia pet in my stomach?"
wow. really? wow. and I work in a corporate office. lol.
but they all loved it anyways. (btw, the jam I used is a homemade no-sugar added jam made with no-sugar-needed pectin i found at wally world, raspberries and erythritol).

course, one of them also asked, "so i can have a few pieces right? you're a health freak so it's low fat, right?"...um no. not so much. I told everyone it's made with REAL cream REAL cream cheese and almond flour (almonds have fat in them!!! :P)

but anyways. i just love sharing my "wierd" food with people - their reactions are always "what am i eating??" as they're scarfing it down and ask for seconds...

Successfully did Atkins in 1998 using 1992 copy of the book...before it was "hip". Lost 60lbs, exercised daily, felt and looked great. And then I moved in with a junk-food loving man, my mom got sick and passed away, then I suffered a spinal cord injury, and junk-food dude left me...and now I weigh 292lbs. That's 22lbs MORE than I weighed the first time around. It's 10 years later...I know this will work for me again.

Curious why you think chia is healthier than flax? The comparisons at this website seem to give flax the edge, and it is cheaper. I have nothing against the chia seeds, seriously plan to try them soon, but not likely to give up my flax.

(To use the links to compare, make sure to adjust to the same measurements. One of them wouldn't stay adjusted for me to save the link.)

Flax is slightly higher in protein, lower in 'glycemic load' and is moderately anti-inflammatory, where chia is mildly anti-inflammatory.

I hear chia has the advantage of not needing to be ground, which would surely be a plus. Does it swell if you cook it, somewhat like tapioca? I liked using quinoa as a sub for rice in rice pudding, and would love it if chia would reproduce the 'pearl' effect. Seriously I do plan on trying it soon.

everywhere I've read up on chia says it's healthier.
i love both. i use both.

plus - chia doesn't tend to go bad as fast/like flax can.

Chia is one of those things I keep looking for to try out, but cannot find at the moment. I have only been into small healthfood shops as yet and no-one there knows what I am asking for

I love chia. It thickens without that slimy-booger texture flax has.

Anyhow, it swells slightly and has the appearance of mini-tapioca. I use it in a low carb bubble tea or in an instant pudding.

It is so much fun to take "our goodies" to the public! I remember making a mock coconut cream pie and taking it to work. Everyone thought it was the real thing, without a crust, of course!
