| There was an entire egg thread only a week or so ago. Here's what I remember--- Fresh eggs stick more than eggs that have been in the fridge a few days so use older ones for boiling. Peel them under running water for easiest peeling. To boil perfect eggs, put them in the pan in cold water. If you stick a pin through the end they won't crack open on you in the pan. Bring the pan to a boil, covered. When they reach a rolling solid boil, turn off the heat, cover and let sit until they cool to room temp or only slightly warm. Perfect eggs every time. Tender yolks, none of the gray-green around the outside of the yolk. |

| I use a timer that goes right in the water with the eggs. When it turns black..the eggs are hardboiled and I get them into cold water right away. I saw the timers in our Dollarama the other day. (I am in Canada) It works great!!

| I drain them and immediately put ice water on them to stop them for cooking any longer. If the water gets warm dump it and put more ice wate on them. |

| I put them in boiling water... boil for 14 minutes... dump out the boiling water and put the pan under running cold water until the eggs are cool to the touch... as the water is running, I take off the shells, rinse the eggs in the running water and place them in the bowl... |

| Something I learned from the recent thread on the subject is that if you crack the shells while they are cooling in water it allows the gas to escape that makes that grey bit appear!

| This is how I boil eggs (except I don't stick a pin through the end) and no problems with peeling them. Quote:
