Default Baking mix

Does anyone know if the new Atkins baking mix is ok? The add says its good for Stage 2 and on. If anyone has given it a try can you plz give me feed back. Thanks.

In stage two yes but at the very end of OWL (OWL is stage two) It is wheat gluten based and looks fine for rung 9. I kind of make my own mix with wheat gluten so I am not ordering any of that stuff at the moment

The reviews I've read say it's pure nasty! Even when I'm at that level I'll go with Carbquik or Bob's Red Mill Low Carb Baking Mix, both which have great reviews (for different applications). Do a search on all three and see what you find.

Hmmm
A basic pancake recipe to serve 4 persons usually only asks for 2 cups of flour.
When I make pancakes for me using wheat gluten, soy flour and wheat bran and a bit of flax and whey powder I don't think I add that much "flour" I eat it with some ham or bacon or canadian bacon usually (or cream and strawberries sometimes) OWL is about portion control and if we were used to eat a stack of pancakes that reached the roof - it may be time to rethink that practice

I don't mind soy so I thought looking at the list of ingredients that I would not mind that stuff

I can't use soy products at all (per my oncologist!) so that's why I do a lot of research on this stuff. I've also looked at coconut flour as well as the nut flours.

I have almond flour which is delicious -- and is acceptable for rung 3. I made a almond bread which I fried in butter and put DeVinci sugar free syrup on top -- it tasted like french toast and was so good to have for breakfast.

I have some almond flour but I've used it very sparingly even though I'm on Rung 3. I'm just afraid I'll over do it. I never did get it straight how much would equal the allotted portion of almonds. 1 oz?? Just not sure.
