Default How do you cook your chicken?...

Ok - so I KNOW how to cook - but one thing I usually don't like is how dry my chicken tends to turn out.

I'm looking for a fast, efficient way to cook chicken so that I can make it at night and have good juicy chicken the next day for lunch, at work (i'm a Monday - Friday, 9-5'r).

How do you cook your chicken so that it doesn't dry out?

Also - fast and easy would be best.

Well I boil 12 chicken thighs... 45 minutes... Then I take all the meat off the bones and keep it in a ziploc in the fridge and warm it up in the microwave when I want to eat it... Takes a bit of time initially, but works out good during the week.

You can also buy frozen grilled chicken patties and warm them in the microwave.

It's gotten to where I primarily make chicken in the crockpot. I can make enough for a couple of days and it's so tender and juicy that it literally falls apart. For 10 breasts, I slice an onion and put it at the bottom, put the chicken in and top with 10 cloves of garlic, a tsp of Paprika, salt and pepper...then cook it on low until dinner time. Even the family loves it!

I usually do mine in the crockpot too - I do a whole chicken.

I have also used this recipe from recipezaar.com with success:

Kittencal's Best Blasted Rapid-Roast Whole Chicken #221743
1 (3-3 1/2 lb) whole chicken
2 tablespoons oil
2 tablespoons melted margarine or butter
1 1/2 tablespoons lemon juice (can use more lemon juice if desired)
1 1/2 tablespoons seasoning salt (or use as much as desired)
1 teaspoon garlic powder
1/2 teaspoon fresh ground black pepper
1/8 teaspoon cayenne pepper (optional)
2 medium onions, quartered (may omit if desired)
cotton string

Rinse the chicken inside and out well under cold water, then pat dry using a paper towel.
In a small bowl mix the lemon juice with oil and melted butter until blended, then rub all over the chicken.
Using clean hands rub the inside and outside of the chicken with seasoned salt, garlic powder, black pepper and cayenne (if using, you can season the chicken under the skin also if desired).
Place the quartered onions inside the cavity (you may omit the onions if desired, I like to add them in for extra flavor).
Place the chicken into a baking dish (you can place the chicken onto a small roasting rack if desired).
Using cotton string tie the legs together tightly.
At this point you may cover and refrigerate for up to 6 hours (not more than that or the acid in the lemon juice will start to "cook" the chicken).
Set oven to 450 degrees F.
Roast the chicken at 450 degrees for 20 minutes, then reduce the heat to 400 degrees and continue roasting for about 40 minutes (or until the internal temperature reaches about 175 to 180 degrees F. about 1 hour or a little less).
Cover with foil and let sit for 15 minutes before slicing (do not slice before that time or the juices will flow out!).

I bake my chicken with some oil on top of it and a little bit of lemon juice, salt, and pepper. 2 leg/thigh combos take about 45 min to cook. The skin is crispy but the meat is tender and juicy. You can change the lemon pepper for other seasonings, this is just what I prefer.

I usually bake my chicken as well.... skin on, covered in melted butter and sprinkled with garlic salt and pepper.

I'm looking forward to trying the crock pot.

I bake it at 350, but it takes atleast an hour to get done. (like 75 mins for thighs and legs) Its not too dry to me though. I cook it in a pan with a rack so its not sitting in juices or anything. Crockpots are wonderful, gotta try that!

I oven bake chicken thighs, skin on for an hour an a half, its crispy but still juicy and tastes good as breakfast/lunch the next day.

I dredge chicken breast through egg then into parmesean cheese and fry it in olive oil -- YUMMIE!!!

I pour ranch dressing over my chicken, cover tightly with foil, and bake at 325 for 90 minutes. I buy the gallon size ranch dressing at Sam's Club, use it for everything!
