Default Devilled Eggs during Induction?

Just started the all important "Induction Phase", went and loaded up at the grocery store with meat, eggs, cheese, sugar free jello etc. Also bought several packaged, pre-made cartons of "Devilled eggs. Hope I did not mess up, but noticed tha sugar WAS an ingredient after eating them this afternoon. Thought they were carb free. Anyway, does anyone know how much harm I have done to my Induction phase? Im only two days in, but was really wanting to be hardcore! I have consumed almost NO carbs with the other foods I have been eating (Roastbeef, cheese, sugar-free jello, water) so with that, does anyone know if thye Devilled Eggs have enough sugar to put me over the 20g or carbs per day? Sorry for the length, BUT any and all help and input is greatly appreciated.

Have you read Dr. Atkins' New Diet Revolution, version 2002? That's the version of Atkins we go by on this board. I doubt you'll go over 20g carbs for the day, but this is not something you want to get in the habit of doing. You should read labels before you purchase things and make sure the ingredients are on the Acceptable Foods List for Induction. Sugar-free Jello, for instance, is pre-sweetened with aspartame, which Dr. Atkins advises to avoid at all costs. It's a known staller.

Also, I noticed you didn't mention veggies. Are you eating your 3 cups daily? Two should be from the "Salad Veggies" list and one from the "Other Veggies" list, or all three from salad veggies. Best of luck to you!

EDIT: If you haven't had a chance to read the book yet, I'd HIGHLY recommend reading this great thread by Georgiana: http://www.atkinsdietbulletinboard.c...tion-faqs.html (Atkins Diet Induction FAQs) . It will help you very much, but it still would be a good idea to read the book to get a firm grasp of the diet.

Also, here's a recipe for Induction-legal deviled eggs: Linda's Low Carb Menus & Recipes . They're very easy to make, and you can make a huge amount in one batch!

Hi and welcome Bryce --

Make a copy of this list (What foods can be eaten on Induction?)http://www.atkinsdietbulletinboard.com/forums/atkins-low-carb-dieting-faqs/6781-what-foods-can-eaten-induction.html and take it with you when you go to the store. If a food isn’t listed on the acceptable food list don’t eat it. Learn to read the label on all foods you buy - don’t just look at the “carb” number look at the ingredients list of everything and check the ingredients against your list. Just because it says "low carb" doesn't mean you can eat it. Also check for hidden sugars (learn the names used in place of the word “sugar”).

The recipe sites are helpful for meal planning – just make sure you use Induction Recipes to begin with.

Even if the sugar in those pre-made deviled eggs don't send you over the 20 grams of carbs a day, the sugar is not allowed. The rules of induction make it clear that all food must be sugar free--this is why you must read all labels and the ingredients list.

Just because for the 'serving size' they state zero carb or zero sugar, does not mean if you go over the tiny serving size you won't be ingesting extra carbs and sugar. Your body reacts way different from 20 grams of carbs from legal veggies and fruit (tomatoes, peppers, etc.) than it does from 20 grams of carbs from sugar, corn syrup, HFCS and white flour.

You also need to learn all the different names under which they hide 'sugar' and other carbs.

Legal deviled eggs are very easy to make: All you do is hard boil the eggs; split them in half while still warm; put the yolks in a bowl and mash with a fork. Add some mayo and mustard, plus a bit of vinegar & Splenda if you like the sweet/tart taste, salt and pepper, mix up well and spoon back into the halved whites! How easy is that?

SunnySmile is so right - they are so easy to make. I say have a go yourself. They're fresher that way anyway.

Appreciate all the input folks. I will certainly make my own devilled eggs this weekend. Also, I am a bit bummed about the No Sugar Free Jello w/whipped cream, as that alone has been keeping me going (as far as snacks go). Guess there is aspartine in the jello, even though the Carb count is zero? Ugh! This just got a bit tougher, thought I was doing good.

Anyway, thanks again, all input is greatly appreciated.

Don't get bummed out--it's early in the game. You can also make sugar free Jell-O by using 2 packs Knox unflavored gelatin, 1 pack Kool-Aid in the cheap packages that have no sugar and no artificial sweeteners (which would be aspartame), plus Splenda to taste. You mix all that with 2 cups water--one cup boiling; one cup cold.

Make sure that your whipped cream is homemade and not Cool Whip or from a can.

Hunt's makes jello cups that are made with sucralose. Still probably not the best option but I do use them...but only once a week maybe. I have never eaten them very often but eating them here and there doesn't seem to bother me.
