Default Fried jicama. omg.

Ok - so I FINALLY decided to try jicama. and let me tell you - if you haven't already discovered this INCREDIBLE vegetable...you are missing out!

So for dinner last night, I had decided to make Chile Chicken Monterey off of Linda's site. I wanted a vegetable and as much as I like broccoli and cauliflower, it gets so old.

SO. I've been doing research on other vegees to try / cook differently - and have always heard good things about jicama - but never really tried it.

I stopped by the store, picked up a nice size one - went home and decided to fry it up like french fries.

I am also on a coconut oil kick (learning more about the benefits, trying to get more into my diet, etc...although I've been using little bits of it here and there since May...) I had a canister of the cheap Louanna's coconut oil from wally world that I never used (after I bought it I realized I wanted the better stuff)...

Anyways - I filled up the bottom of a deep frying pan with some of the coconut oil - let that heat up - peeled and chopped the jicama - put salt/pepper all over - and fried the jicama in the oil for about 5 minutes.

OMG you guys - I have found my new favorite vegee!!!!!

I know most people use jicama like an apple (as it's crunchy like one) putting cinnamon/splenda, etc on it (i will try this -just havn't yet) - but I wanted "fries". And they were just awesome.

They were even more fabulous for lunch today! I was afraid, being 'fried' that they'd get soggy - but nope - kept their crunch and was just as yummy. seriously - just passing this on. IF you haven't already - you should TOTALLY try one.

PLUS - the best part of all? It's induction friendly for those of you on induction!!!!

It quickly became a favorite of mine, too, so worth the trouble peeling it.

Like you, I prefer it fried, either like french fries or sliced or shredded (awesome as hash browns). My mother used to fry sliced potatoes and onions together when I was a child. One of these days I'm going to try that with sliced jicama as my potatoes, although I may want to start the onions well before adding the jicama, since it does start to brown rather quickly.

As with potato fries, I think the key to making these fries yummy is getting the oil hot enough before adding the veggies. I have an electric deep frier and I use that at 400 degrees for the french fries.

Keriann, this is a great point - not only is it Induction-friendly, it is also classified as a "Salad" Veggie. I've heard some say that most of the veggies they like are on the "Other" Veggie list... this means you can still have 1 of your other 2 cups of required veggies come from the "Other" list.

Another great reason to give jicama a try - it contains 6.4g of fiber per cup! I am always looking for ways to get fiber in, and this is a great source.

My whole family loves it too. We slice it really thin and fry it like potato chips and then add a bit of salt. Really yummy. I am going to try it like hash browns next. I am having a much easier time finding it in stores than I did a few years ago.
