| As Carole suggested, substituting almond or coconut flours will work - but they would not be 'legal' for you to eat till you are on the 3rd OWL rung. So make sure you work your way up the OWL carbohydrate ladder in time to be able to enjoy them in the holidays!

| You can get the taste right, but all sugar free cookie recipes will be very fragile and won't work well for cut-outs.

| Ok I gave this a try (half of the recipe given here) and I used coconut flower (and a tbsp of almond flour). They came out tasting very good but to me they taste more like a coconut cookie my mother use to give me than a sugar cookie. If I were to make them again I would use less butter, more egg and a little more sweetener. But all in all I give it a 7/10. Edit: They are a little crumbly as well.

| Thanks for all the great cooking ideas! I will be well into owl by the holidays. Love the tree ornament idea, definitely will try that. I love getting festive during Halloween and Christmas! I've lost 4 lbs this first week of induction, yay! But also trying to get through this bronchitis!
