| Hmm... A cup of tomatoes (raw) is about 180 g. A cup of zucchini is about 113 g. A cup of onion, chopped, is 160 g. A cup of eggplant, cubed, is 80 g. A cup of peppers, chopped, is 150 g. So assuming these are mixed in equal volumes, a cup would have about 135 g. That's about 8.5 carbs per cup. I'm not sure how you got 20+ carbs per cup...

| Well the bag is marked 700g in total. I cooked the whole bag, but when I was putting it in, I only got 2.5 cups out of the whole bag. That works out at 280g of veggies per cup, and if 80g of veggies = 5g of carbs, as per the bag, then I work that out to be 17.5g of carbs per cup. It just seems exceptionally high to me.
