| I would suspect that all meat, even skin, has protein. How much, I couldn't tell you. Someone more knowledgeable than me regarding pork skins might have more insight.

| I'd say a crackling had zero carbs but the skin might have a little protein? Generally the skin is kinda tough and I just like the fatty part. You could compare it to pork rinds which is the skin made puffy, but a cracklin has got to be mostly fat. Something like 1/3 porkrind, 2/3s fat would about give you a cracklin. If cracklins arn't listed on fitday, you'd have to create a food.

| Yes. From an old paper of W. E. Henry, 100 g of pork skin (without any fat or meat attached; the thickness should be about 2-3 mm) has approximately 35 g protein, 23 g fat and the rest moisture.
