I'm not sure how/if they fit on Atkins. I mean how do you classify glucomannan? The noodles are pretty much zero everything nutritionally so they probably could fit in somewhere...I wouldn't use them in Induction though. That's just a personal suggestion with no science to back it up.

On to the noodles themselves. Some people like them. I think because it gives them the sense that they are eating pasta. They are quite strange looking and feeling and can have a slight fishy odor. Rinsing before use is supposed to help with that.

Taste-wise...well there is no taste really. It's the texture that got to me. Think of chewing on a rubber band; the noodles actually squeeked against my teeth. That was not appetizing to me at all and actually grossed me out. My homemade sauce was delicious and that is what helped me get through that first dish of shirataki noodles. I had ordered several different types and so I tried various dishes with them. Same result and I decided to forgo squeeky food forever.

Shirataki noodles were all the rage a few years ago when low carb dieting was still very popular. As I mentioned, some people do like them. The angel hair version is definitely much more palatable than the fettucine or thicker noodles. Trust me on this.

If they are allowed on Atkins, all I can suggest is to try some. You really have to experience them to understand what I have posted above.

Thank you so much for responding! I'm on extended induction and have been having a crappy week ; I've eaten clean but am up two pounds.

I was just looking for an alternative, and since I'm from Japan, the fishy issue won't bother me, but like you say, I'll have to try them.

I'm with you, Mizski. I couldn't get past the texture. I saw a recipe (I think on their website) where you can make a pudding out of them. You like grind the noodles up in a blender and mix with other stuff. Always meant to try that but never did.
The noodles are basically fiber so they do feel you up.

The texture didn't bother me. Since they're from a root/veggie I use them sometimes (Rung 1- more veggies!). The tofu ones are better--but tofu is soybeans, so not quite to that rung yet.

I tried these once when I was really really missing pasta.. the fishy smell really turned my stomach but I rinsed them under hot water as suggested till I felt it was gone. I cooked up a yummy homemade carbonara sauce and got pretty excited... it really looked like pasta... then I tasted it... ugh, I could not get past the texture and it the sauce does not stick to it like regular pasta... yes, rubber bands are EXACTLY what the texture is like. Maybe it's something that is an acquired taste, but I didn't care to find that out. haha... it did help in killing my pasta craving; I wanted nothing to do with anything pasta like for a while after that.

I LOVE THEM!!!!!!

If you rinse them under COLD water in a strainer the smell washes away. Then I rinse them under HOT water to warm them. If you cook them they will get rubbery.
I then dry them with paper towels (they will stick to the paper towel but will rub off easily). If you don't dry them they will not absorb the flavor of the sauce or butter you put on them.
They really don't have a flavor but they will absorb flavors well if dry. I like the angel hair best and the fettuccini next.
Worth a try if you are not a texture freak.....

I just ordered my second batch. I haven't eaten real pasta in many years so maybe that helped me but I think they're OK. I rinse them and then no fishy smell or taste. With a good sauce I think they're quite palatable and they fill you up.
