| My crockpot is my very good friend... try a cheap, tough as boot leather chuck roast and throw it in there for about 8 hours on low along with some turnips, onions, celery, and a can of tomatoes... that's my fave. On later rungs when you can have beans, a crockpot of chili is just heavenly. Round steak with tomatoes and onions is another favorite... serve over cauliflower "rice". |

| I do a crockpot chili without beans and use diced eggplant in it instead. The flavor is a bit different but it is nice. Or a good crockpot beef vegetable soup works. |

| My favorite thing is to take a pork roast, cut little slits in it and put garlic in it. Then sprinkle it with some salt & pepper and seasonings you like (I love Bavarian seasoning by Penzeys). I do this in the crockpot but it could be doing in the oven also. Another time I took the leftovers from the roast, cut up potatoes and veggies of your choice, put them in the crockpot with some broth so it was like a stew. |

| Chili (ground beef, diced tomatoes, tomato paste, onion, green chile, garlic, cumin, chili powder). Cook on high for 4-5 hrs. Serve with sour cream and shredded cheese. I sometimes add pumpkin too. Pot Roast (chuck roast covered with no added sugar spaghetti sauce - I use organic ones I get at Costco - no sugar except those from the tomatoes) Cook on low for 7 hrs. |

I make Barbequed Chicken in an oval crockpot > Line the bottom of the pot w/ thinly sliced rings of onions > Add some water and a few drops of soy sauce - enough to cover 1/2 -3/4 inches, some garlic or garlic powder if u like, maybe pepper, paprika, in fact any herb/spice that u like that would go w/ chicken > Place chicken parts on the onions > Cover w/ sugarless bbq sauce ( Read the ingredients and carb info very carefully - i don't live in the US so i'm not sure what commercial BBQ sauce u can use - i make my own w/ fresh tomatoes, a touch of sweetner, pepper/garlic/paprika/ other herbs/spices, Olive oil, soy sauce, a little lemon juice and/or cider vinegar) > cook on HIGH for 1-2hrs, then LOW for maybe 3 hrs till done. (You can 'brown' the chicken in Olive Oil +/- some spices, first, in a frying pan and then u seal the juices in, cutting the crockpot time to HIGH for 1 hour Then LOW 2hrs) My crockpot has an 'AUTO' feature that starts the cooking process on High and automatically switches to LOW and this works for me too, but each crockpot has its own settings, so caveat emptor.

| I love to make salsa chicken. Put chicken breasts, 1 can salsa on low 6-8 hours. At the end add 1 cup of sour cream to the mixture and enjoy! |
