| It depends on what I'm using it for, if I'm using it like a bread crumb sustitute in a recipe, I use the stuff in a can. If I'm using it to actually flavor a dish, I use the fresh. |

| I use both fresh and canned Parmesan and Romano. I prefer freshly grated and use that most times when the cheese is a garnish. The canned, powdery stuff works better as a coating for foods (in lieu of bread crumbs) or for thickening or as a binder (meatloaf/meatballs).

Thanks for the feedback. I've always used freshly grated, and it never dawned on me to use the canned for "breading". No wonder my results were so different.

| Good Point Jill, Since I don't usually buy the stuff. I know I don't buy the pre-shredded cheeses because of the added coatings, so it makes sense. Thanks
