| It would depend on the day but... asparagus, Brussels sprouts, broccoli. Then there's the red peppers, cauliflower, artichoke hearts, sun-dried tomatoes, fresh tomatoes, canned tomatoes. A vegetable that I can and do do without is mushrooms.

| Wow...that's tough just picking 3! If I could only have 3 they would be: cauliflower, zucchini, broccoli.

Dr. Atkins doesn't write that you are not allowed to divide your veggies into 1/3 cup increments or 1/2 cup increments etc. So if you chose to eat 2 cups of the salad veggies, you can eat either 2 cups celery OR 1 cup celery and 1 cup cucumber OR 1/2 cup celery, 1/2 cup cucumber, 1/2 cup red peppers, 1/2 cup alfalfa sprouts, OR 1/4 cup celery, 1/4 cup cucumber, 1/4 cup red pepper, 1/4 cup alfalfa sprouts, 1/4 cup fennel, 1/4 jicama, 1/4 cup radishes.

| Amanda, I'm assuming that you're asking this question in the same vein as "If you were stranded on an isolated island and could only have 3 books, which 3 books would you take to read?", rather than planning to limit yourself to 3 veggies in real life. In that case, I would choose jicama, mushrooms, and cauliflower. |

| Definitely broccoli, spinach (fresh) and celery... oh and radishes, turnips, cabbage, cauliflower, asperagus... wait, did you say 3??? |

| Tough - veggies are so versatile - I think if had to limit myself to three it would be mushrooms, peppers and onions. I can have a lot of fun with those three |
