Lightbulb Okay Ladies and Gents...it's time to think about Thanksgiving

What are your favorite Thanksgiving recipes? Could you mark which ones are induction friendly and which rung they fall under?

I am going to try and convert my pumpkin pie recipe for this thanksgiving. It should work ok without a crust aswell. I can't wait for the holidays.

I think it should be induction friendly. I will post the recipe when I convert it

I do stuffing (in the bird) as opposed to dressing (in a casserole dish). I think stuffing has much more flavor than dressing and now that I can have fats on Atkins, stuffing is good.

I made this stuffing last year. I made the low-carb stuffing bread from the link in the stuffing recipe instead of buying some chemical-laden commercial loaf. Plus I really prefer almond meal rather than the soy in commercial loaves.
  • With the stuffing, I used a combo of chopped mushrooms and red/yellow/orange bell pepper rather than the green bell pepper.
  • Used 1 stick of butter instead of 1 TBS of oil. I mean come on...how can you saute 9-10 cups of veggies in 1 TBS of oil???
  • Used chicken/turkey broth instead of plain water.
  • Adjust (lessen) salt amount if using broth and/or Better Than Bullion
  • Watch the Bell's seasoning amount...I used a lot less. Add it teaspoon by teaspoon and taste after each until it has the sage-iness that you like.
It wasn't the same as my regular stuffing but it was pretty tasty.

I am afraid my Thanksgiving will be pretty typical. I do want to try the sugar free cranberry recipe that was posted somewhere (probably in the Canadian Thanksgiving thread). I just eat what is acceptable and the rest of the family eats everything else.

In the past, I have done a sausage stuffing. It was made with rice and some bread...not sure how that would be converted but my picky eaters are not big on stuffing so we will probably just skip it.

Dessert...I like the idea of something "pumpkin". I know I made a pumpkin cheesecake once upon a time (that I found somewhere on here).

This is my first holiday season on Atkins. Will be interesting to see how it goes.

We're planning on spending Thanksgiving with my inlaws in Texas. My husband's step-mother is known for being one to "take over" the kitchen on this holiday, my first with the extended family. Know what? Doesn't bother me one bit. LOL I'm going to put my feet up, enjoy the company, and bring a veggie tray and salad to accompany my slices of juicy turkey.

I'm thinking about some kind of pumpkin somethin-somethin for dessert.

Funny the holiday was always all about the food. This year it's going to be all about the company.

Kind of wish I had just one more side, because in my opinion, thanksgiving is ALL about the side dishes. Maybe by then I'll be at the point of the diet where I can have cottage cheese.

I just gotta figure out what kind of container that pumpkin recipe goes into.
