Default Re: Having a hard time with the veggies

I wouldn't do a garnish. Maybe a side plate of sliced tomato, cucumber and feta with oil and vinegar. Or a dill pickle (with no sugar-Mt Olive is a good brand) Or coleslaw made without carrot and using mayo, vinegar and a dash of splenda as the dressing.

Another thing I do to make my life easy is to steam a head or two of cauliflower until really soft. Pop in blender with some butter and cream cheese or sour cream and it makes a great mock mashed potato. If I don't want it that way I add some chicken broth and a bit of cream and make it into a creamy soup. You can then add other flavors like curry powder or a bit of salsa and jack cheese to give it more zap. You can also make a cream of broccoli soup the same way. I usually add some cheddar to my broccoli soup. Its, quick, do ahead, and helps my veggie count.

I hear you! I hate veggies and Salads! :X just the thought of having to eat them has kept me actually with no hunger at all. I have to force some food down. I just close my eyes and chew as much as I can take every couple of hours. I dislike them so much :::gag:::

I have to say, though, that this way of eating totally changed my taste buds. I don't know if it was going into ketosis, or my husband being a good cook, but one way or another I started loving onions, bell peppers, mushrooms and other "veggies" on Atkins. I would really recommend you give some vegetables another chance, especially using recipes from Linda's recipe site.

As J. pointed out, doing Atkins will be very difficult (impossible, imo) if you do not like vegetables. But just because you don't like them NOW, it does not mean you can't retrain yourself to like them. However, I doubt this is going to happen unless you change your attitute towards eating veggies (closing your eyes is childish and doesn't help) and your way of eating them (chewing as much as you can is not the right way, imo).

Most people like pumpkin. There are some recipes in the threads below.
http://www.atkinsdietbulletinboard.c...n-recipes.html (Nigella's Pumpkin Heaven (recipes))
http://www.atkinsdietbulletinboard.c...o-pumpkin.html (Hokkaido pumpkin)
http://www.atkinsdietbulletinboard.c...ke-recipe.html (Looking for a Pumpkin cheesecake recipe....)
http://www.atkinsdietbulletinboard.c...ound-meat.html (I have a pumpkin... and some ground meat...)
http://www.atkinsdietbulletinboard.c...up-please.html (MUP please!!!)

Celery root can be used to make chips: http://www.atkinsdietbulletinboard.c...ion-legal.html (Snack chips--Induction Legal)

Or try cauliflower. You can make mashed or riced cauliflower... or it can be prepared like stuffed baked potatoes... or you can make pizza with it, for example.

Or you can mix steamed veggies with mozzarella cubes.

Or instead of using mozzarella, you can sprinkle crumbled feta cheese on top of steamed veggies.

Talking about mozzarella, you can make Insalata Caprese. It can be made either with fresh tomatoes or with roasted tomatoes (sugar and balsamic vinegar can be left out when you roast the tomatoes).

What veggies are you usually eating? How do you prepare them? Did you try all those on the Acceptable Foods List?

Maybe one of your goals could be to try a new veggie recipe each week. There must be something you like!

There is also the Veggie Challenge coming up soon; you might want to join. In that challenge, those who are on Induction need to eat at least 12 net carbs from veggies every day of the challenge, OWLers need to eat at least 17 and those in Maintenance need to eat at least 22. This is the link to the last Veggie Challenge (from April this year): http://www.atkinsdietbulletinboard.c...challenge.html (5th Semi Annual Veggie Challenge!).

I know my attitude towards veggies stinks but I do eat them. Hopefully I will enjoy them more as I go.
