Default Atkins on a budget ...

OK so, I have a budget that i have to abide by. I only work part time and don't have alot of money to get all kinds of foods, or ingredients for recepies. Here are the main meats I buy on a regular basis:

chicken breasts
chicken quarters
hamburger
bacon
fish
pork shops, pork steak
turkey ham
tuna
roast



please help me out with some simple recipies for a big girl on a budget ...
i will look at and welcome pretty much all recipies ...

The recipes on Linda's site that are acceptable for Induction are marked with an *.

And, you should be able to tell if a recipe is Induction friendly by knowing what's on the Induction food list ...

Part of the fun of Atkins is learning new things!

I like ground beef, fried up with some chopped onion and southwestern/mexican type spices and a little tomato (fresh diced though I'm sure you could use a tiny can of paste without sugar), put on top of a bowl of lettuce (like just chopped romaine) with some shredded cheese and hot sauce, maybe some sliced black olives or chopped green chili peppers or a spoon of sour cream. Like a taco salad but no shell. And if you are desperate for some crunch with it, use some pork rinds to dip up some of the spiced beef - the spicy beef covers up all the flavor of the pork rinds.

Not many of these items have much in the way of carbs - but each has a little bit other than the ground beef, so you can just add up based on how much onion, tomato, spices, and hot sauce you use in the ground beef and divide it up based on how many servings you will make out of that pan. Then just figure your carbs for the lettuce and any extra toppings you put on it each time you have it. If I use a pound or so of ground beef, it will make enough to top about 4 good sized salads for me. Very filling.

I try to freeze a ziplock bag or two of it (just enough for one meal) each time I make this so I have a nearly instant dinner some night if I am too tired to cook - heat it up and put it on some lettuce with whatever toppings I have around that particular night.

I do drain some of the fat off the ground beef after I brown it with the onions and before I add the tomatoes and spices and cook it just a couple more minutes, but I guess that would just be a personal preference.

Everyone who has had this (non-Atkins folks) at my house likes this meal pretty well, too.

I know exactly how you feel, I have to have atkins on a budget and so far its day 5 for me and I try to spend 35-45 dollars a week on the food. I buy

bacon
eggs
sausage
carrots
salad dressing
jello packets
pork skins
cheese cubes.
lettuce
And with that stuff typically lasts me for 7 days.

read the labels and look for any hidden carbs, starches, sugars, bread crumbs in anything you buys, sauces, prepared meatballs, hamburger patties etc. i almost messed my induction up... if you want to see an overload of would be self sabotaging, read my posts in induction because there were 3 or 4 people who got me on the right track really fast!!! huge amounts of information!! good luck... stick to it..it's worth it!!!!
