FWIW, I experienced something similar when I went back on Atkins after taking a hiatus for my pregnancies. All of the convenient low-carb foods that I enjoyed my first time around had disappeared, which was extremely disappointing to me, to put it mildly.
After the initial disappointment and "what do I do now?!?" phase, I learned to work around it. There are some incredibly creative recipes in the desserts folder, as well as on this
website. Also, try Googling "low carb recipes;" you might be surprised with how much comes up. Basically it took some research on my part and snooping around various low-carb websites, but I've found enough recipes to keep me happy without having to buy pre-packaged, low-carb products. I also get the benefit of eating healthier in the process.
I will say that I visited my parents recently and they have low-carb ice cream in their area - holy cow was it good!!! - so it was stark reminder of what I'm missing. And yes, I miss the convenience factor a LOT. With two young kids, my time is incredibly limited and I have days where finding time to take a shower can be challenging. Unfortunately, the market has turned away from low-carb in general, so the demand for those products just isn't there anymore. Now I plan ahead as best I can. I'm no angel, but I'm making do.
