Wow... I love this recipe! Thank you for broadening my breakfast repertoire.

When I was mixing everything together, I was thinking, "you gotta be kidding me!" I was still skeptical when I pulled it out of the microwave. But WOW that first taste was good!

My version:

1 egg
2 oz. cream cheese
1 tsp. Splenda (box, not packet)
1/4 tsp. cinnamon
1 T. flax seed meal

Nuke for 2 minutes.

Next time I'm going to hold back some of the cream cheese for icing!

OH WOW is this good!

I use 1 egg, 2 oz. cream cheese, 2 pkts. Splenda, 1/4 tsp. cinnamon, and 2 tbsp. flax. I also do the reserve-for-icing thing. This makes two nice servings, just right for me and hubby to split.

The wildest thing about this recipe? I don't even like eggs!

so do you grind the flax seed first, is that what you refer to as flax meal??

I finally tried this yesterday, but added unsweetened cocoa with a little cinnamon. It was nearly a chocolate cake!! I used 1 egg, 2 heaping spoons of flax meal, cream cheese and sweetner along with the cocoa and cinnamon. It was so wonderful - very bread/cake like and I realllllly enjoyed it!

My microwave died and I'm not getting another one since I'm having a house built and it will have one. Is there anyway to make this in the oven or the stove top for now?

Yes, except I buy it already ground. Our store has it in the bulk item bins and that's cheaper than buying it in a box.

I don't know if maybe you could grind whole seeds in a coffee bean grinder or not.

Yep. Grinding the seeds in a coffee grinder works fine. If you already use one for coffee, buy another for the seeds and such or they'll pick up the coffee taste.

I'm gonna have to re-try this recipe because when I made this on sunday, it was flat out NASTY!! I used the ground flax too and I couldn't even eat it!! gross!!
I will re-try it tho...maybe I just did it wrong.

If you let it sit for a bit before you nuke it the flax will absorb some of the liquid and be less gritty that was why I wrote to mix the flax with the creamcheese first. The longer you let the flax mixture sit un cooked the more bread like the final product will be. If you add too much flax you will get a slime texture.

it can be baked in the oven or in a skillet with a lid like a pancake on top of the stove.
