Default Taco Meatballs

I don't know where this recipie came from, I dug out my recipie book from two years ago when I was "originally" doing Atkins... I have many,many, many, recepies to share:

1 1/2 lb ground beef (pretty lean)
1 package taco seasoning mix (Taco Bell, Ortega, etc.)
1 green onion, finley diced
2 eggs
1 clove garlic, minced [optional]
1 block sharp cheddar cheese, cut into small cubes (or you can also buy cheese already cut into "cubes", I have seen them a Walmart)

Preheat the oven to 425°F.
Beat eggs and mix all ingredients except the cheese together. Mold a Tablespoon of meat around a cube of cheese to form a small shaped meatball. Repeat with all meat. Place on edged cookie sheet (sprayed with PAM) and bake at 425°F for 7 - 10 minutes or until meat is done and cheese has melted.

Less than 1 carb per meatball.

These are great to "snack" , quick lunch or even for parties !

Made this recipe this weekend and have to tell you it was a hit with everyone! Atkins and non-Atkins people thought they were great.
Makes alot and I hope it freezes well!

What a great recipe! I can't wait to try it.

Just a warning... Lawrys taco seasoning packets have 18 grams of carbs per packet which includes 6 grams of sugar! I'm not sure what the other brands of seasoning packets look like, so be sure to look at the label closely.

Here is a good homemade replacement if you want to skip the seasoning packets:

1 teaspoon paprika
1/2 teaspoon cayenne ppepper
1 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon basil

This recipe is probably way too much for a pound of ground beef. Don't use all of it at once -- mix together and put it in an old spice jar so you can use it when you need it. Just season the meat to taste.

I made these the other night and they were great!! I served them on some boiled and then blended califlower (fake rice/potatoes) AWESOME!

The seasoning I used had 12 carbs, so I only used 1/2 a packet to cut back, but still great!

Default Awesome Recipe!

These meatballs are the best! I made them yesterday for lunch and my hubby and father-in-law just loved them. They are easy to make and very filling.

I told my mom about them last night and I'm forward the recipe to her as we speak.

Keep the great beef recipes coming!

I loved this recipe, but I changed it a little.
I made a meat loaf with it. I took half the meat mixture, put it in the pan, put chunks of cheese all over it, then took the rest of the meat mixture and put it on top.

It was so yummy. Next time I'll use garlic and onion powder, or a small onion chopped.

Great recipe.
