I did this yesterday and took another tablespoon of butter and melted it in the cup before adding the flax mixture. The muffin popped out just like a cake would from a tin.

By the way the muffin was very good!

OMG!!!!!!!!!!! These were absolutely amazingly good! I made one for breakfast this morning. I think I will start having these 3-4 times per week! I made mine in a bowl and had it on a plate while my kids had whole wheat pancakes. Each of my kids had a bite of it and they want me to make them one tomorrow for breakfast. I admit that I was quite liberal with the butter I put on top. I'm thinking of find some 0 carb maple syrup...if there is such a thing. I can't believe how full I felt after eating that. I have one question though. the original poster listed 11 gross carbs but only 1.5 net. Where did the 11 carbs come from? on my package of milled flax it lists 4 gram carbs and 4 grams fiber. Doesn't that make 1 carb for the splenda and maybe one more for the rest of the ingredients? Just want to make sure I understand how to count carbs when I make thing like this... don't want to overdo it. thanks for the great recipee!
