Buffalo Chicken Casserole | | | Buffalo Chicken Casserole 2 servings 1 cup Chopped Chick Breast (I used leftovers from a baked whole chicken)
4 oz Franks Hot Wing Sauce
2 Tbs Butter
1 tsp White Vinegar
1oz Soften Cream Cheese
1 Tbs Ranch Dressing
1 Tbs Heavy Cream
2 Tbs Mexican Shredded Cheese
2 Tbs Blue Cheese Crumbles
Preheat oven to 350.
Melt butter 1 min max in microwave. Add vinegar and hot sauce to same bowl and heat in mircowave 1 ½ min more. Pour hot sauce mix over chopped chicken. Stir and set aside.
In another bowl mix ranch dressing and soften cream cheese, Microwave for 45 seconds. Remove and stir in heavy cream until smooth.
Spray with Pam 2 single serving 1 cup bowls that can go into the oven, then divide chicken/sauce by ½ cups into bowls.
Pour the cream cheese and ranch dressing mixture over the coated chicken pieces. Sprinkle w/ Mexican cheese.
Bake uncovered for 10 minutes.
Remove and sprinkle the blue cheese over the casserole.
Let stand for 5 minutes before serving.
I ate this w/ a lettuce and Italian dressing. Delicious.
