Default Chicken Ceasar Bake

I have hit a bit of a boredom wall, and threw a bunch of things together and ended up with something super yummy and great!

I am busy busy and needed something I could literally throw together. This is what I came up with:

(I am not a cook who uses recipe's so please adjust accordingly!)


I threw about a cup of cooked chicken ( I bought a large pack of precooked chicken breast, but cooking up some chicken and freezing it doesn't have to be as costly and is always good to have on hand)

I threw this in a tupperware container with about 1 oz of cubed sharp cheddar cheese, and a table spoon give or take of Renee's Ceasar Salad Dressing put the lid on it and shook it up so everything was coated. I then put it into individual baking dishes and put one in the toaster oven for 15 minutes at 350 degrees.
Renee's is canadian but any fresh mayo-like dressing with zero or low carb count would do.

I froze the rest and just ate the last one. I am going to do it again this afternoon and plan on adding some cooked broccoli and cauliflower chopped up to it, for some good healthy carbs.

I thought I would pass it along because it is really satisfying and knowing I had something like that on hand that I could pop in the oven ( or microwave) has been great, expecially when I have been so busy.

I am not good at figuring the math/carb count of this stuff so please feel free anyone to refine this recipe and add a carb count for posterity!!!!

Sounds great! How did the frozen ones reheat? Did you try it with the cauliflower and broccoli? Did you freeze some together with the cauliflower and broccoli after it was cooked? How did that reheat?

It did reheat well. I did add some veggies, some zuccinni and onion and broccoli, it also reheated well. I don't use a microwave so I threw it in the toaster oven and baked it slow.. the broccoli was a bit brown but it was all tastey!
