Smile Chicken Alfredo Pizza [Amazing!]

This is a tweaked version of Linda's Deep Dish Pizza.

The crust is exactly the same:
4 oz cream cheese
2 eggs
1/4 cup Parmesan
8 oz. shredded mozzarella
salt, pepper, Italian seasoning, etc. to taste

Whisk cream cheese until smooth, whisk in eggs. Add Parmesan and spices, stir. Add mozzarella and stir until completely moistened. Spread evenly in 9x13 well greased glass pan. Bake at 375 for 20-25 minutes. Cool. When nearly cool, take spatula and life crust away from dish (but leave in the dish). Refrigerate an hour or two uncovered.

From here I made a wonderful creation...a chicken, bacon, spinach, Alfredo pizza that is incredible.

To make Alfredo sauce:
5 tablespoon Heavy cream
6/8 cup grated Parmesan
1 stick butter or margarine

Mix all together in sauce pan over low heat for 5 minutes or so.


Once the crust is ready, spoon the Alfredo over the crust and spread evenly.

For toppings I used:
4oz. Pepper Jack cheese
4oz. Chicken (approx.)
5 pieces of bacon, torn into pieces.
1/4 cup raw spinach, chopped

You can use any kind of cheese - the pepper jack was perfect and added the tiniest bite, but certainly not spicy. I used left over roasted young chicken. This was a HUGE success!

Serving: 1/8th of recipe -
412 calories
35 fat
2.65 carbs
23 protien

fantastic! wasn't too sure about it when i was making it, but when it had all come together it was delicious. so nice to eat something that actually looks like a pizza. thank you very much for a great recipe. xx

So, how is this crust? Is it pretty grainy or mushy? The feux bread products have all been gross to me so far.

obviously it's not the same as a real pizza crust, but i definitely wouldn't call it grainy or mushy. it's not really trying to be a faux bread, just an alternative sort of pizza base.
personally, i thought it was delish, but just remember to have faith when you half-way through putting it together, cos it's looks pretty yucky at that point!
