| Ryan, that does sound great. Since I am not a pork eater, I will convert it to turkey. I have been eating turkey breakfast sausage patties and this will mix it up a bit for me, I tend to eat the same things over and over out of habit. Thank you for the recipe.

| This is an older post but one that is pretty tasty. I loved scrapple when I lived in Maryland but can't get it up here. This recipe uses eggs as a binder instead of the traditional cornmeal/buckwheat so it's even Induction friendly. I made a half batch and used a smaller loaf pan. I also substituted a little sage for the thyme and added some finely chopped chicken livers to the mix. Delicious sliced and fried up with an egg on top (I did a poached egg so I could get lots of that yolk running all over it). A fried egg would be tasty and easier too. ![]() If you fry up an extra slice, it makes a good & portable snack also.
