Deli in a bowl - easy lunch | | | I saw this recipe in a cookbook and thought I'd modify it to make it 'friendly'. It sounds weird but it's actually pretty good!

.3 cup cut up cooked ham
.3 cup sauerkraut
.25 cup shredded mozzarella (swiss would be good, too)
1 Tbsp low carb Thousand Island (I used a recipe I found on this site - see below)
Lightly mix together and micro til cheese is melty.
Not quite sure what the carb county would be - I'm guessing 2 or 3 net carbs?
Oh - the Thousand Island Dressing:
1/2 - 3/4 cup Dukes Mayonnaise
1 Tbsp Heinz sugar free ketchup
1/2 Tbsp Mt. Olive No Sugar Sweet Relish
