Default Ginger Glazed Mahi Mahi

I love fish at restaurants because it is always delicious there but I have never been very good at making delectable fish at home. TONIGHT changed everything. Found this recipe on line and it was amazing. I used mahi mahi but it would be terrific on salmon or chicken cutlets as well. It has sweet, tart and a little heat the way I doctored it. The entire sauce recipe has only 10 carbs for the whole thing!

Ginger Glazed Mahi Mahi

4 - 6 ounce pieces of mahi mahi, salmon, butterfish, or fish of choice
1 Tbsp. fresh ginger
3 Tbsp Splenda or Sugar free syrup (I used Carey's maple)
1 large clove garlic (I used the elephant garlic) crushed
3 Tbsp balsamic vinegar (I subbed 1 1/2 cider vinegar)
3 Tbsp low sodium soy sauce
1 Tbsp vegetable oil (olive, canola, sunflower)
1 tsp. sesame oil
1/4 tsp cayenne
1 Tbsp lime juice

Mix all the ingredients except fish in a shallow dish and place the fillets in for 15 minutes. Flip and marinate another 15 minutes. Put a half tablespoon of oil in a non-stick frypan and heat to medium high. Save the marinade but remove the fish and fry 3-4 minutes per side. Remove to platter.

Place leftover marinade in pan and reduce to a glaze. Pour over fish and veggies (I had steamed broccoli, red and yellow pepper, and pearl onions) and it makes a very tasty and quick meal.

For the entire sauce recipe, there is 202 cals, 9 grams carb, and 18 grams of fat, 3 grams protein.

I did not include the fish in the counts in case you change it up for another protein.

I finally made this last night! It was to die for. I used tilapia and my veggies were fresh from my garden red and yellow peppers and broccoli. The only change I made was to use rice vinegar and I added a bit of lime zest. Mmmmmmmmmmmmm

I might try that, maybe over a bed of shredded cabbage. I LOVE fish tacos, but, even the low carb wraps stall me so I gave up on them... Need to have fish tacos in a bowl I guess.

I had the best fish taco EVER a few months ago in FL. I can't quite put my finger on the seasoning that was used, but, I've gotten close with about 2 parts cumin to 3 parts all spice... then I add a little cayenne for heat.

I am good about trying most anything, but fish tacos just sounds...wrong. I looked and looked at recipes, but couldn't make the leap necessary to thinking fish belong in a taco shell or salad.

Don't they though? Never, ever thought I would try one but nowadays culinary fusion menus have even hit Cape Cod. Can you imagine? Pineapple salsa on top of fish instead of tartar sauce or lemon??? (Actually, it is pretty good...can't wait to have it again.)

Anyways, there it was at one of our favorite seafood restaurants: fish taco. What the hello??? Just sounds so very wrong and definitely NOT something you'd expect to see on a Cape Cod menu. So I tried it...and I loved it! Who'd of thought that could happen? I wish I knew what the sauce was though...that's what made it outstanding.

p.s. I think they should have a better name though. Maybe something like bacalao or pescado taco would be better!
