Default Cottage Pie (meat dish)

I have never measured out the exact ingredients of this dish, so I'll do my best to give good measurements.

If you are not a great cook, this is a FABULOUS recipe because you really can't mess it up and you can feel secure trying new ways of making it each time.

I make this in a large lasagna pan.

Cottage Pie

1-2 lbs Ground beef (depending on how much meat you want
Can of stewed tomatoes (optional)
Spices as needed (as listed in step #2)
1 block of cream cheese
2 cups green beans (I like Italian Cut canned)
3 cups sharp cheddar cheese
Mashed cauliflower (look for the recipe in this section)

Steps:

1.Prepare mashed cauliflower to your preference. A whole head of cauliflower will work.

2. Season raw ground beef with any or all of the following, depending on what you like:
-salt and pepper, strained stewed tomatoes, herbs de provencal, garlic, onions, italian seasoning, basil. I often use just salt and pepper and lots of it!

3. Layer cooked meat into bottom of pan/dish in an even layer.

4. Placed cubed cream cheese all over the meat, distributing equally

5. Evenly distribute green beans (I love Italian Cut) over the meat and cream cheese. You can also try this recipe with corn, lima or butter beans, and peas. My fave is the green beans, though.

6. Sprinkle a cup or more of shredded sharp cheddar (sharp makes all the difference) over the mixture

7. Spread mashed cauliflower over everything.

8. Top with sharp shredded cheddar to your liking.

Cover with foil, making sure foil is not touching the top cheese. Bake at 350 until heated through (about 25-30 minutes). Remove foil and bake for a remaining 10 minutes to firm up the top cheese.

tip: Between each layer and on the top cheese, I like to do a light sprinkling of salt and a whole lot of pepper to help meld the flavors together while it cooks.


I make this on Sundays and spend the rest of the week eating it for breakfast. The whole family loves it so it's a non-low carb crowd pleaser!

corn, lima beans, butter beans and peas aren't allowed on induction so if anyone wants to use these wait until you are on the proper rung

how many servings does this make? Do you have the carb and other totals?

Good job, Carole. I just assume people know their allowances according to what level they are on, but not everyone is that way.

Let's see...
one block of cream cheese= 8 carbs
1lb hamburger meat = 0 carbs
1 cup Italian cut green beans = 14 carbs (4 of that is dietary fiber, just FYI)
2 cups cheddar cheese= 2-3 carbs
1 medium head of cauliflower= 30 carbs (14 of that is dietary fiber)
1/4 cup butter in mashed cauliflower= 0 carbs

Obviously, the cauliflower is the major protaganist in this story. Reducing and spreading the cauliflower extremely thin can reduce the carb count here drastically.

This is about 6 servings, although you can divide it up as a snack item into smaller tupperwares for 8 servings. Here is the total carb breakdown for that:

For 8 servings
55 carbs total in dish
6.87 carbs per serving

For 6 servings
9 carbs per serving

You can go to nutritiondata.com to break it down and get whatever nutritional data you need from there .

Actually I had already put everything into Fitday before I posted -- I thought others would benefit from the totals. I was just wondering how many servings you were getting from this dish.
