Default LOTS of Sausage recipes!

I was wanting to find some homemade sausage recipes after realizing all the ones in Canadian stores are full of nitrates and carbs... and I stumbled on to this site.

Homemade Sausage Making Recipes from TheSpicySausage.com

I've perused a number of the recipes, and am in the (messy) process of making Breakfast Sausage #2 right now. I didn't see much in the way of added carbs to any of the recipes, although there is one that uses apples that is not Atkins-friendly. But there's lots here!

These look great! Do note that any of the ones that have wine in them are not legal until Rung 5 (more than half of the ones I checked called for wine).

Oooo, good point!

I wonder if you could use water or maybe a mild apple cider vinegar in place of the wine... it could be worth a taste test.

I'll let you know how the sausage I made tastes when I have it tomorrow morning for breakfast!

Okay, I couldn't wait - I fried up a couple patties of Breakfast Sausage #2 for supper tonight.

They were fantastic! Very sausage-y, nicely spiced. Made my kitchen smell wonderful! Even though there's no sweetener of any kind in it, it still had that lovely "sweet" taste that breakfast sausage tends to have.

I'm glad I have 5 pounds of it! I've got a good 2 dozen patties plus extras in my freezer. That'll last a good while.

I've been making homemade sausage for years now. I got tired of additives, chemicals and "mystery" meat in sausages. I try to buy beef or pork roasts on sale and have the butcher grind them. They double grind my lamb or beef for my kofta recipes. I also have them grind a mix of boneless chicken breast and thighs which I prefer to ground turkey. This way I also know what meat goes into the sausages too.

I haven't put the sausage meat into casings for quite a while. I usually just make patties or link shaped logs. And you're right...they are delicious.

Thanks for the website. Lots of great recipes. Some of them I'll have to save for further down the road. When you are on the fruit rung, that makes a wonderful addition in many of the recipes.

To be honest, if you don't use wine in recipes, the flavor isn't the same but it can still be tasty. Takes some trial and error taste testing to find a perfect substitute that you like.

In general:

Nonalcoholic Wine Substitutions

To replace 1/2 cup wine use:
  • 1/2 cup broth + 1 teaspoon wine vinegar OR
  • 1/2 cup broth + 1 teaspoon lemon juice
Some recipes work better with chicken broth and others, beef or vegetable. Use homemade or low-sodium broth. If you can find it, Rachael Ray's Stock In A Box is as close to homemade with real ingredients that I've found commercially.

Experiment with different vinegars...red wine, white wine, champagne, apple cider (get the unfiltered one that looks like apple cider...cloudy), sherry, marsala vinegars add different flavors.

My husband and I both love sausage - all kinds of them. I think we will really enjoy these! I have saved the link and will experiment with this It is SO HARD to find sausage that has no sugar/fillers in it! It has really limited us.
