  • The crab thing

My family loves this and I never know what to call it since I use it different ways so my family just say, "would you make that crab thing you always make?" so I guess that's what to call it.

    So easy too.
1 cup crab meat, cleaned (you can use canned)
1 3 oz pkg cream cheese, softened
    mayo (start with 1/4 cup)
    onion powder
    cayenne pepper to taste
    dash Worchestershire sauce
1 Tbsp chopped green onion or chive
    1/2 c shredded mild cheddar

Mix everything except the chives and cheddar in a bowl. It should be like a soft paste. If too thick add some more mayo or a little heavy cream. Spread in a shallow baking dish and top with cheese. Bake at 350 (180 c or Gas mark 4) until warmed through and cheese melts and starts to turn golden. Remove from oven and let stand 10 minutes.

I serve it with celery, red pepper scoops, or endive hearts. I also serve it over plain baked fish fillets or roll it up inside them. When you get to the point of having low carb tortillas it makes a great roll up filling too. It is also great for a party serves with traditional breads and crackers for your non Atkins guests.

Mmmmmmmmmmmmmm that sounds good! I'd have to use extra sharp cheese, since I don't like wimpy mild. I only have canned crab, but I like the real stuff better. Shame it's costs the earth right now.

              Your name sounds better, Glenn.

Sunny, I have tried it with both, but the crab flavor comes through better with the milder cheese for me.

Hope you all enjoy it as much as we do--but it is way too easy to eat too much of this.

I lucked out and my grocery store had good lump crab meat on sale very cheap, so I'm going to be having this real soon!

                  Re: The crab thing

                  Oh, yummmy!!!

I have one alternative to cooking it all...but then there's the idea of melting cheese, but any ways....

I've used a tin can (taking the ends off of the green bean can) and set it on the plate you'll use.

Layer the ingredients (crab mixed with mayo or whatever, avacado, cheese, chopped veggies) until it's half way filled and packed down well---then remove the tin can and everything Should stay in one place. The opperative word here is "should". It's worked for me about 2 times that I've made it. It just looked like I actually did something fancy and pretty---and wowed my non-Atkins family
