  • Help me get BACK on the wagon

Ok, I am 5 weeks post surgery today and while I am tickled pink about having lost 25 pounds---oh well, 23 today because my son's Halloween candy attacked me and held me captive.

Yes, you heard me correctly, things like Peanut butter cups, Almond Joy bars, Snickers, peanut M & M's held me down to the floor and forced me to eat them. I resisted at first, but gave in to their demands and since Friday, have averaged 2 of these sinful delights a day until today, when I got me big arse on the scale and was horrified to see that 2 pounds came back.

So, today I am back to my Atkins plan and trying to be a good girl. But, I feel ashamed and sad that I gave in because i was doing so good despite the fact that I am not allowed to do any exercise or lifting for another two weeks.

I could use a bit of encouragement because I feel like I need a 12 step program here!

Thanks everyone! You just saved me from the Great Pumpkin descending upon me during my most vulnerable time---just before my son gets home from school! Perhaps now, he won't be wondering why his trick or treat bag seems to be shrinking! Instead I drank water, coffee and chewed some sugar free gum.

            Karen-Kenobe! gotta love that one!

I've been snacking on cabbage - both red and green variety.

Crunchy and kinda spicy and yummy.

cabbage? boy, you are good--it is so hard for me to get into eating a lot of raw veggies. I am a true testament to being a person who cannot tolerate sugar, that's for sure!

Thanks and someone posted this awesome chocolate truffle which I made today and REALLY helped me get over the sugar withdrawal today. Yummo--I should have been prepared for Halloween by making some snacks ahead of time and I wouldn't have screwed up.

                      You can do it

I was in the same boat and was making chocolate whipping cream plus pumpkin atkin rolls around 10pm on halloween night. I was about to devour all the kids candy....it got so bad I had my friend laughing because I was inhaling my son's sucker. I swear that thing smelled sooooooo good.

Making legal treats for yourself on days that you know you might be tempted is a GREAT idea. I was just thinking that same thing...for me, they have to be made and ready because once I get tempted I don't have the patience to make something I can have.

And where's the recipe for the chocolate truffle? It sounds yummy.

Re: Help me get BACK on the wagon

Here you go--I got this from the recipe section of this board. It is incredible. I did not do mint though, just regular chocolate as I don't care for minty stuff

                          Chocolate mint truffle tort

I converted a recipe that I found on Linda's low carb menu and recipe site and was looking for a way to find out how many carbs it now had. You can visit Nutrition facts, calories in food, labels, nutritional information and analysis – NutritionData.com to enter the ingredients and get your updated nutrition facts.

Here is the recipe I changed with the changes listed. My changes are listed in blue.

NOTE: I made this at first with only 1 packet of Stevia and if I make it again I will add another half pack as it could use to be a tad bit sweeter.

CHOCOLATE MINT TRUFFLE TORTE Linda's link
6 ounces Valor 70% cocoa dark chocolate with MINT, chopped * (you can use any 70% cocoa chocolate bars)
                          1/2 cup butter, cut up
                          Pinch salt
1 cup granular Splenda or equivalent liquid Splenda or 1.5 packets of Stevia powder
                          1 tablespoon cocoa, sifted
                          3 eggs
                          2/3 cup heavy cream
                          1 teaspoon vanilla
                          Whipped cream, optional

In a large microwave-safe bowl, melt the chocolate and butter on 50% power for 2 minutes or until the butter and chocolate are melted, stirring once or twice. Whisk until completely smooth. Whisk in the salt, sweetener, cocoa, eggs, cream and vanilla. Whisk until well blended. Pour the chocolate mixture into a greased 9-inch pie plate.

Bake at 350ยบ degrees for 15 minutes or until the torte has puffed around the edges but the center is almost firm to the touch but still slightly jiggly. Cool completely. Chill well before serving. Serve with whipped cream if desired.

                          Makes 8-10 servings
                          Freezing not recommended

*Using the 70% cocoa is just fine with my changes as the carbs from the splenda are now not included in the carb total for this item.

                          With Stevia:
                          Per 1/8 recipe: 227 Calories; 22g Fat; 3g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs
                          Per 1/10 recipe: 182 Calories; 18g Fat; 2g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs

                          Linda's Nutrition facts
                          * If you can tolerate the bitterness, you can save quite a few carbs by using Lindt 85% cocoa extra dark chocolate. I haven't tried it myself, but I've included the counts below for that version.

                          With granular Splenda:

Just wanted to thank everyone for their support. I got back on the wagon and lo and behold, lost that 2 stupid pounds that I gained. It has been rough going though--just today, an Almond Joy duct taped me to the kitchen chair and began diving into my mouth. I resisted though and headbutted that thing into oblivion!

I learned a valuable lesson from all of this though--"My name is Karen and I am a sugar-aholic" anyone else want to join my 12-step program?
