Camping??? Help!!!

  • Camping??? Help!!!

    Ok so I'm going camping next weekend and was wondering what I should bring food wise that is do-able for me while doing Atkins? Anybody go camping while on Atkins? What did you pack for food that wasn't too much trouble? Any ideas on a subsitute S'Mores? I don't want to make it such a pain for me to eat while I'm there. HELP!

    We keep it simple too.
    Breakfast - Flax muffin for me the rest breakfast bars
    Lunch - sandwich meat and lettuce rollups for me the rest sandwiches
    Supper big meal - meat, salad, canned gr beans baked potatos for the rest
    Snacks - cheese sticks, jerky sticks, almonds if allowed (add to lunch if desired)

    S'more replacement - wrab ground beef around a dowel (use better grade or it cracks while cooking) cook over open fire, slowly turning until cooked, remove with several lettuce leaves, stuff hole in center with cheese stick and eat.

      Camping shouldn't be too hard. Here are a couple of ideas.
      ( I know we shouldn't eat too much processed food, but of course hot dogs are great over a fire. They have NEVER stalled me.)

      Here is something I used to love to do and it is very low carb. In good thick foil place LARGE meatballs (mixed with all your favorite spices). Freeze them if you won't be eating them on your first night and they will keep better in the cooler that way. Then when you are ready to start dinner after getting your fire hot enough just rake some hot coals to the side and lay the foil package right on top. Turn periodically to keep from burning on one side. Make one for each person and they can open the package and eat right out of it! You can also make small foil packages with veggies and butter but don't place right in the coals. Maybe on some rocks near the fire or on a grate above it if you have one.

      Of course bacon and eggs are easy to travel with. You could precook your bacon at home to save the trouble while camping, you could also boil the eggs (allowing you more time to enjoy the trip).

      If you want smores you can try the recipe from Blaine's lowcarb cooking show depending on what rung you are on of course.

      Not long ago he did a whole show on camping. Maybe you can search his site for other camping friendly recipes.

        Camping in November? Hunting perhaps, or just getting out?

        Soup is a great thing to have to reheat....any meat and veggie soup made with water and broth for the "liquid" is a great help.

        Boiled eggs, precook some bacon, string cheese, and Oopsie Rolls were my camping staples this past summer...you'll have to search oopsie rolls here, but they are AWESOME!!! and induction friendly.

        Precook burgers and chicken for lunch and dinner...or snacks too if the meals too long to wait for.

        I made the oopsie rolls and roast beef "sandwiches" with veggies. I stored the oopsie rolls in a ziploc and carried them that way..this being fall, you'll have a better chance of them not sticking ( I think).

        All the veggies you can take with you!

        Stay clear of the really salty things and avoid jerky and pork rinds (although they were good for one trip) but I felt bloated eating them.

          Camping with the family...husband, kids and I for an extended weekend. My kids 11 & 7 have never been camping before. Thanks for the input. It's greatly appreciated!
