  • Cottage cheese pancakes

    Hi,

    I am on Rung 2 and want to add cottage cheese this week - does anyone have an appropriate cottage cheese pancake recipe?

    No, sorry. I just have one for rung 9.
    If you were on the the nut rung you could replace the wheat flour for flaxmeal. I can't think of a recipe for rung 2. darn it!



    Cottage Cheese Pancakes

    1 Serving
    These are high-protein pancakes and quite a treat!
    Prep time: 10 minutes
    Start to finish: 10 minutes
    Ingredients:
    1 egg
    1/2 cup cottage cheese
    1 tsp canola oil
    3 tbsp whole wheat flour
    Instructions:
    1. In a small bowl, beat the egg with a whisk until creamy.

    2. Push the cottage cheese through a wire strainer into the egg in the bowl. Mix well.

    3. Add the oil and flour. Mix well.

    4. Lightly oil a skillet and place over low heat. When the skillet is hot, spoon the batter into the skillet making four pancakes. Flatten slightly with the back of a spoon. Cook 2-3 minutes on each side, or until lightly browned.



    Nutritional Information: Per serving:
    272 calories
    11 g total fat (3 g sat)
    217 mg cholesterol
    20 g carbohydrate
    23 g protein
    3 g fiber
    523 mg sodium

      I modified a recipe I found online, replacing the soy flour with psyllium husk (it will be 2tbsp/serving - I'll skip my usual psyllium husks that day & the next day. Yes, this is still cheating.) In the long run, I don't see myself doing the pancake thing often - I like a quick, convenient breakfast (I nuke frozen quiche) on weekdays, and on week-ends I let hubby pick breakfast - so it'll usually be bacon & eggs

      ...I'm going to try this in the morning & see if it works, and if its good If not, I'll just eat the cottage cheese as a snack the other 2 days this week. I just want to add cottage cheese in before I move to Rung 3.

      This is what I'm going to try...(unless someone posts something better before morning)

      Low carb cottage cheese pancakes (2 servings)

      4 eggs
      1 cup cottage cheese
      1 tablespoon butter, melted
      1/2 teaspoon vanilla
      1/4 cup psyllium
      1/2 teaspoon baking powder
      2 pks splenda
      1/4 teaspoon salt
      1/4 teaspoon cinnamon


      Blend all ingredients in blender for 10-15 seconds. Cook on lightly greased moderately-hot skillet, flipping once, until both sides are lightly browned.

        2 things: These were really good! They were also super filling - I think 1/4 recipe plus a piece or two of bacon would make a really nice & legal! breakfast.

        Hubby liked it too.

          Thanks for reporting back. You did not do the split the eggs and whip stiff - I think have seen that in some cottage cheese recipes. I think 1/2 cup of cottage cheese are plenty of carbs (but my carb threshold is low)
          I think I may try pancakes with cottage cheese some day. I sometimes make pancakes using some seeds and grains (as I am on OWL 9)

            Julie -- this is the pancake recipe I use...they are really good with butter and dipped into DaVinci s/f maple syrup.

            Pancake

            3oz cream cheese (soften in microwave)
            2 eggs
            1 tsp cinnamon
            1 Tbsp sugar free syrup
            Butter to taste.

            Beat thoroughly pour in greased skillet on low/med heat for 4 minutes. Flip and fry another 1-2 minutes.

              Nope, just plop it all in a blender, whirl for 10-15 seconds & pour in the pan. EASY

              The stuff I bought was 5 carbs / 1/2 cup - perfect for going up a rung. I like the cottage cheese ones because they are filling...I imagine seeds/whole grains would be similar (when I get to that rung).

              I guess I'm a little funny about cottage cheese...I want to be able to have it if I want it, but eating it plain (or with fruit) brings back memories of horrible-starvation-diet-food. With the pancakes it it just an ingredient in something I like...mind games I guess.
