Is 100% cacao acceptable on any rung?

  • Is 100% cacao acceptable on any rung?

    I don't have my book handy, so I don't know where 100% cacao would fall. I'm toying with a coconut oil, stevia, and cacao dessert once I progress a little higher up the rungs, so I'm curious.

    Also, does anyone know where 100% cacao can be purchased in stores? I found 60's and 70's at Trader Joes, but can't seem to find 100% anywhere.

    Thanks for any tips/info...

    It's a nut. So goes with the other nuts.

    Also, does anyone know where 100% cacao can be purchased in stores?
    Really? One can find it everywhere in Germany... Did you look in the baking section?

      you can find 100% raw cacao powder or nibs at whole foods, however, Whole Foods is not in all areas. Or, you can order it from vitacost.com.

          Ahh, Whole Foods. Will try there. I was looking for 100% bars - maybe it's in with the powder stuff. Thanks for the tip...

            Seems like I'm changing my opinions lately more often than I'm cleaning my room... Blame it on age! Both the opinions and the cleaning...

            If you look through my old posts about cocoa, I am saying that it is fine during Induction "in spice amounts." Apparently, in one of the Atkins books it is included among spices... but I don't have a reference for that (anyone?) and I have no idea if it is correct. By comparing the way cocoa and nutmeg are made, you could extrapolate and say that cocoa is allowed as a spice (and now Megs will come and tell me about cows ).

            But let's face it, we don't use cocoa as a spice. We use enough to make something taste like chocolate because... we like chocolate... and we want chocolate. We liked it pre-Atkins and we don't want to give it up... not even temporarily (until OWL Rung 3).

            I don't think anyone needs truffles or whatever chocolates on Induction.

              But let's face it, we don't use cocoa as a spice.
              Which is why I'm staying away from it as a dessert for a long time. That being said, I've had a mole recipe mulling around in my head, so I'll probably use it there first...

                That makes sense. All the truffles are in the freezer anyway, so they'll still be there for later.

                  I enjoy it on the dairy rung... mixed with ricotta and a little splenda to make a chocolate creme... Can also do this with lemon juice instead for a lemon creme. I have to measure it out carefully though and only make enough for a serving or I'm a goner.

                    I don't think cacao is a nut. It's chocolate isn't it? I have a cup (1 heaping tsp.) of unsweetened cocoa every morning instead of coffee. I put liquid stevia in it. It has 2g carbs and 2g fiber. I use Bensdorp Dutch-Process Cocoa that I get online from the King Arthur Flour Company but you can get good stuff in a gourmet shop. I don't like Hershey's. I like dutch process.

                      100% cacao ... do you mean baking chocolate ... as in Baker's Unsweetened chocolate?

                      Almost any good chocolate brand will have unsweetened.

                          I'm not on induction anymore but I had my teaspoon of chocolate every day when I was. Where does it say that it's forbidden?

                            Your Atkins phase says Induction, so you can understand my confusion.

                            Cocoa isn't on the Acceptable List of Induction foods in your copy of DANDR.

                              I don't understand what you mean... Are you saying that cacao is chocolate, not a nut?

                              You can read about cacao here: Cacao - Wikipedia, the free encyclopedia

                              Cocoa is the seed of the cacao tree... so, a seed... if you want to be botanically accurate. It doesn't make any difference for Atkineers though. Nuts and seeds are OWL Rung 3.
