So, would adding a snack of 5 - 7 baby carrots to my induction menu do the trick?

No, they are not induction veggies. Carrots cannot be added until you are up to Rung 8 on the OWL ladder. They are higher on the glycemic index is the reason why. You can add 5 more carbs from the acceptable induction veggies. You can choose however veggies that have higher carb counts from the acceptable list, such as snap peas in order to get more carbs from the veggies in.

would snow peas be acceptable on the 1st rung of OWL?... I don't think they actually qualify as legumes.

Mirya, yes. The difference between snow peas and sugar snap peas and say English Peas or Sweet Green Peas (like canned) is that for snow & sugar snap we are mostly eating a POD. The pea is very very small. Whereas with English peas, you take the pea out and discard the pod. With green beans, or wax beans, or string beans...same thing, you eat the pod and the bean is minimal. Green, wax and string beans are all allowed on induction. Because snow peas and sugar snap peas aren't listed on the allowed veggies list, many people wait until OWL rung 1 to add them in.

This is a terrific post. Going from induction to OWL has been my downfall every time I have been on plan. I see now I have been doing it very wrong. This time I will succeed! I am really excited about this. Thanks.

okay, I must be a dum dum cuz I am still so confused! Tha sample menus are great, but would those be consumed the same week? Like on one sample menu you had the pumpkin puree then on the other the asparagus. This is the only part that is confusing me right now. Do I make any sense?
