Default Dairy Rung

Hey,

I have been in the Vegetable rung for a couple of weeks now, have added that extra 5 carbs of veggies almost every day. Now ready to move to the dairy rung does this mean I can increase my cream cheese and heavy cream that I use or do the cheese and cream limit remain the same throughout all rungs?

I think you can up both of those by 5 grams--though not both in the same day. In Kimberly's Ice cream thread, there is some discussion about other Dairy Rung items. I've been trying other stuff....I even have eaten some cottage cheese...and I NEVER ate that before.

Just a word of caution about the Dairy Rung....

This is the rung where you need to be a little more aware of your fat intake. Remember, protein stays the same, but the fat decreases slightly as you increase your carbs. In order to do that, your fat intake must remain the same or be slightly lower. So if you choose to eat 5 net carbs of heavy cream, you might want to eliminate a serving or two of the Induction cheeses or eliminate a tablespoon of added fat for the day.

If you have a fitday.com account, you can play with the foods so you have an idea of how you should plan your daily menues.

Thank you that is the part that I wondered about since I know that adding more veggies in is naturally lowering you fat where adding another 5 gram of heavy cream or cream cheese would be adding to it.

See, it's always better to check it with your fitday.com account.

Technically, if you eat those 3 cups of Induction veggies, plus 5 net carbs of the Rung 1 veggies daily, you can add the 5 nets of dairy without lowering the hard cheese or added fat amount. But to do this, you'd need to eat veggies that have more than 1 net carb per cup.

So you can play around with this and you can plan your meals better. This is why I tell people that OWL is where you learn to eat in the real world: and why you shouldn't skip OWL phase: you're learning that if you eat an ounce of walnuts with some celery, you don't need to eat it with an ounce of cream cheese because the walnuts have enough fat on their own.

yep you will find that your fat % goes down slightly from 65 to 60 as you add back the carbs by the time you get to maintnenance you should be around 50% fats with the protein staying the same and the carbs coming up to 20%

You try to keep the fat ratio the same or slightly lower. Lower can be 1%. But the Dairy Rung is where you need to begin the balancing act because you are adding a higher fat food (dairy) so you may need to omit a serving of fat while eating that additional 5 net carbs Dairy. What I do is if I'm eating a fresh cheese or adding cream, I don't eat an ounce or two of the hard cheese or I don't eat as much added fat. For example 1 tablespoon of olive oil or butter is all you need to change the fat ratio significantly. So if I'm eating cottage cheese, I'll use that as my "dressing" for a salad, instead of my usual oil and vinegar. Or I'll use part of my Dairy Rung cream as the salad dressing (1 tablespoon or 2 of heavy cream plus 1 tablespoon vinegar, lightly beat with herbs and thinning it with water makes a nice creamy dressing of salad greens or cold steammed/grilled veggies.)

It's like the nut rung. Whenever I eat that ounce of nuts, I omit using about 1 tablespoon of added fat for the day because nuts are high fat.
