| It's got a nice taste, sort of nutty and rooty. You cut it in half, remove the seeds, and bake it. I like to microwave it until almost done (soft) and then add some pats of butter, cinnamon, nutmeg, splenda, and some chopped walnuts, and then stick it in the oven for another 10 minutes. |

| Here's a link with pics of different squashes, Emma. http://www.foodsubs.com/Squash.html I like to cube it, rub with olive oil and add some onions to it and roast it in the oven until it is soft and the edges have browned slightly. Add salt and pepper to taste, and a fresh herb like sage or rosemary. Any leftovers I puree in a blender with some chicken stock and make a soup out of it. The other thing is to make chips (crisps for you UKers): There should be a recipe for pumpkin chips/crisps in the snacks or side dish section of the recipe forum. Just follow those instructions.

| Oh, it's one of the best! If you bake it long enough (a little browning, crisping at the edges) it carmelizes and gets super sweet! Don't even need splenda. It's the smell of Thanksgiving around here in New England. |

| Thanks for the thread, Emma I stopped on Rung 8 going up the ladder... didn't see anything that appealed to me there. These sound interesting, though. I will give them a go soon. Although I like pumpkin and spaghetti squash, I have not cared for yellow squash or eggplant. I've been kinda hesitant to try any more.

| eggplant is GOOD Mitzi! i stole Elizellens recipe... throw it in the microwave for about 4 mins then top with shredded cheese and cooked bacon bits, throw under the grill (you dont call them grills do you?) until crisp, so good! had them for dinner last night! Guys thanks for all the ideas! i think you've got me wanting, i'll be sure to give it a go when i get back from vacation! Thanks again!!
