Thanks Megs. I had already read that sticky thread, but still find it complicated. As you can tell, I'm not really good with Math. I rely on FitDay for everything and now that I'm on OWL FitDay gives me some wacky numbers.

Okay, I am confuzzled......I am moving to OWL on Monday so I know to add 5 gms of veggies that week, but what I don't understand is how long am I supposed to continue to add veggies before I progress to another rung? And is it supposed to be 5gms the first week, 10gms the 2nd and so on?

I have half a mind to stay on Induction because this part is confusing, lol.

Tofu should NOT be in the legumes rung. It is INDUCTION SAFE (also known as soy cheese). 100g of Tofu had 1.9g of carbs.

I was going to say something about tofu. I'm mainly vegetarian but eat some chicken and will eat fish as well and have pretty much been living on tofu and other soya-based, low-carb protein sources during my two week induction. I about fainted when I read that!

Tofu, plain from the package, is very low carb. It is bland tasting and can be seasoned using anything low carb you have about the place. I make satays, spicy vindaloos, fried tofu to snack on with low carb dips, etc. Good stuff.

Way back in the 1960s through the late 1980s, tofu was called "soy cheese" by many vegetarians and was called that in many vegetarian cookbooks/books. I remember watching a vegan cooking show called "Kathy's Kitchen" during the 1980s. Kathy called the product soy cheese or tofu. When I looked through the older Atkins books, Dr. Atkins did the same thing. The 1992 book says something to the effect of "soy cheese (tofu)". It was only in the 1990s, when vegan companies began manufacturing imitation diary cheeses from soy and calling them "soy cheese" did tofu stop being called that. Believe me on this I was a vegetarian during the late '80s up to the mid-90s, when there was an explosion of faux meat products in grocery stores like vegetarian hamburgers, hotdogs, meatballs, etc. Before that vegetarian processed food revolution, the vegetarian homecook relied on creative vegan cooks, like Kathy Hoshijo, and a lot of specialized food products to make anything look and taste like barbecue spare ribs.

As for tofu being in the Legumes Rung: it is. In the OWL and Pre-Maintenance Carbohydrate Ladders, the foods in the Rungs are allowed in specific net carb amounts. For OWL, it's 5 net carbs. For Pre-Maintenance, it's 10 net carbs. Broccoli, spinach, lettuce are all Rung 1 vegetables, eventhough they are also legal during Induction. However, they are allowed into the diet in higher net carb amounts than they were during Induction. For example, during Induction you are limited to the volume-measurements of 3 cups of the salad list or 2 cups salad list & 1 cup other list. During OWL, you eat the Induction 3 cups plus 5 net carbs of those Induction vegetables. Depending on what you choose as your OWL vegetable, it can be a 1/2 cup tomato sauce or 15 cups of shredded lettuce. In other words, during OWL and Pre-Maintenance, we follow the net carb amounts of the ladder foods, not their volume measurements.
