I went through the rungs during my OWL just to see what would happen to me and if I wanted some food variety, like having some carrots or parsnips in a stew or having some roasted acorn squash or even a bit of potato in a vegetable medley. As for the grains, I learned that wheat wasn't good for me (made me wheeze and have a runny nose), but I learned oats, corn, rye and barley were okay. Again, it gave me more food options. For example, I was able to eat 5 net carbs of popcorn if I wanted to, or I was able to use finely ground oatmeal to thicken up a soup or sauce or use as a light coating on foods or in a batter. For the folks who can use wheat, being able to use whole wheat flour to make a roux to thicken a soup or gravy would be nice to add more food options to their meals.

| Megs, I appreciate your response - thank you! I need to start thinking outside the box when it comes to the rungs. Just because it's grains doesn't mean it has to be bread. Ugh! I need to think with more variety. I love the oatmeal, stew and popcorn ideas. Here I imagined myself gnawing on a carrot for Rung 8 and using a low carb tortilla for Rung 9 - ACK! I will keep moving along as long as I'm able. I'll be using your ideas instead of my boring ones. |
