| I sprinkle chopped nuts on my salads (gives a crunch). You can also mix finely chopped nuts with grated cheese and use that as a "breading". If you mix chopped nuts with veggies, it makes a good stuffing for poultry. For example, if you do an internet search for Gourmet Magazine recipe, pecan stuffed mushrooms. The recipe can be used as such or can be stuffed into a chicken breast, etc.

| I am pretty sure I got this from our board or George Stella's site (great recipes there). Pancakes 1 cup almond meal 1/4 cup water 2 Tablespoons oil 1 teaspoon Splenda 2 eggs 1/2 teaspoon baking powder 2 Tablespoons flaxseeds Mix well and cook over medium heat. They are delicate, don't really puff up a lot, but so nice for a change. My favorite syrup with them is Cary's sugarless maple syrup. I have also made a great zucchini bread with almond flour. If I find it I will post it for you. |

| Great question. I love all the different ideas out there. This is the rung of the one minute muffin for me. One of my absolute favourites. But I also bake muffins. I think you saw the muffin recipe I posted. But there are many variation of this recipe around so you can find out which combo works for your taste. I add pumpkin seeds to that recipe - I like the crunch of them and the taste. I also like nuts in salads - especially walnuts - good in greekish salads. I eat roasted almonds with my yogurt. Flax is also good just to mix in with yogurt. I like to add sesame seeds too my roasted veggies. (They are funny when they pop)

| I have looked at that zucchini recipe but that black strap molasses always throw me off. I assume it is OK in those small quantities. So far I have not dared to try it. Did you use the molasses SunnyB2?

| Yeah that worries me too. I have this imitation honey made from xylitol. Maybe I could substitute that.

| Blackstrap molasses is still molasses. It has the same sugar content as regular sugar and it has the same glycemic index as maple syrup or honey. But it has some extra minerals, like calcium and iron, so it's not an "empty" calorie. WHFoods: Blackstrap molasses There are some diabetic website that say it will control blood sugar because it has chromium, but according to the link above the amount of chromium is "data unavailable", so that makes me wonder what amount it really does contain.
