| I love "hot chicken salad". It's a basic chicken salad that is baked in the oven or heated in the microwave---it's like a creamy casserole! I usually hollow out a tomato and stuff the chicken salad into it, top it with cheese and nuke it until it's hot.

| Great idea for home!! I may buy some cans of chicken so it is easier for me to make at home. I bet you could broil it too. |

| Mom - careful w/ chicken salad you don't make yourself. There's a store brand near me that has sugar as the third ingredient behind chicken and mayo. (!) Megs - I have the same feeling about my hot chicken salad too! I reheated some simple grilled chicken and then put on a scoop of homemade jalapeno mayo, mixed it in, and didn't want to wait until it cooled. It has the consistency of a casserole and is *so* much better than eating it cold.

| Hot chicken salad is a "Southern" states dish. When I lived in the NJ-NY area, my co-workers thought I was nuts for eating warmed chicken salad or turkey salad. But it's no different that a tuna melt, imo. Anyhow, it's good stuffed into tomatoes, red bell peppers and zucchini. Or just put into a buttered ramekin and shoved into the oven or microwave with a topping of cheese. When I cook it that way, I add extra veg like cooked chopped broccoli, asparagus or even spinach (layer it on the bottom of the dish and put the chicken salad on top---totally casserole-comfort food!)
