Smile How much peanut Butter on OWL Rung 3?

Hi! I have been eating approx 25 net carbs on OWL Rung 2 and will start on Rung 3 on Monday.

I want to have peanut butter as a part of my Rung 3 regime. How many tbls should I be having & how many times a week?

Dr Atkins did say that for nuts we should count one ounce of most of them as being the OWL rung addition, no matter what the actual carb count is. The exception is cashew nuts which have 1/2 ounce as being their OWL serving size.

Personally I left adding peanuts till the 6th OWL rung as it isn't strictly a nut at all but a legume.

But many people do add them on the 3rd rung, so you could grind up one ounce of them to make your own peanut butter, adding oil to get a runnier consistency if you like. Or (if you can trust yourself not to eat the lot in one go ) grind up 4 ounces of them and have 1/4 of it per serving.

Or treat one ounce of commercial peanut butter as the OWL serving.

For new-to-you foods we are supposed to add them every other day for the first week on each rung.

In OWL, you add back a food by eating it not more than three times a week. This is something that applies to all rungs, not only to OWL Rung 3.

The only ingredient in peanut butter should be peanuts (and maybe salt, but this doesn't add carbs). So you can eat the amount of peanut butter that is equivalent in net carbs to 1 oz of peanuts. One ounce of peanuts has, according to NutritionData.com, 2.1 net carbs. Most unsweetened peanut butters have about 1 net carb per tablespoon, so you would be allowed to eat approx. 2 tbsp of peanut butter (but check the carbs on the label).

What do you eat with the peanut butter? I used to have it on toast for breakie, but i havent had it since starting this WOL. Im curious to know what people spread it on.

I used it and other nut butters in sauces. For example, a Thai-style spicy peanut sauce needs 4 ingredients: peanut butter, garlic, cayenne pepper and hot water. You mix the peanut butter with the garlic and cayenne pepper. Then you slowly add the hot water, stirring it thoroughly. It will separate initially, but the more you stir the more it gets incorporated and smooth. A bit of lemon juice will give you a more balanced sauce, but that's totally optional. You can use that peanut sauce as a dip for sauteed chicken, or spread it on fish before roasting, or top a burger with it, or add a bit in the final minutes of cooking a stir-fry.

Nut butters can also be used to thicken sauces, like gravies. In fact, pulverized almonds were widely used during the Middle Ages to thicken sauces, soups, etc.
